Ingredients
  

  • 4 chicken leg quarters
  • 4 potatoes large, peeled and cut into wedges
  • 1/4 cup olive oil
  • 2 Lemon juices
  • 4 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Place the chicken leg quarters and potato wedges in a large baking dish.
  • In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, paprika, and cayenne pepper.

    I think 400°F is too low? At least for my setup. Also, I used chicken thighs instead of leg quarters and it didn’t taste as “Greek” as I expected—needs more oregano maybe.

    Not bad, but mine came out a bit bland. I doubled the salt by accident on one batch and it was better, so maybe my lemons were less juicy? I dunno.

      Maybe try zesting too? I always add lemon zest and a tiny bit more garlic. If you doubled salt and it was better then yeah, your lemons probably weren’t as punchy. Mine came out bland once when I only used bottled lemon juice.

      Ugh, that sounds frustrating. I’ve found lemon juice varies a LOT—if your lemons were smaller/drier, the whole dish can taste muted. Also, this recipe’s salt is pretty modest for 4 legs + potatoes; doubling salt (carefully!) usually helps more than people expect.

      I tried this but my potatoes were still kinda soft after an hour… maybe my wedges were too big? Also I think I used too much garlic? It was good though, just not crispy.
