Eggplant and tomato penne is a flavorful, hearty pasta dish that combines tender eggplant with sweet, juicy tomatoes, creating a comforting and satisfying meal. The richness of the eggplant pairs beautifully with the acidity of the tomatoes, while the penne provides the perfect base to soak up all the savory goodness. This dish is simple, yet bursting with flavor, and is a great option for both weeknight dinners and special occasions.
To start, the eggplant is cut into cubes and sautéed in olive oil until golden and tender. You want the eggplant to develop a rich, caramelized exterior while keeping its soft, melt-in-your-mouth texture inside. The key to cooking eggplant is to let it brown slightly, as this enhances its natural flavors and gives it a savory depth.
While the eggplant cooks, fresh tomatoes, either diced or halved, are sautéed with garlic and a touch of olive oil, creating a fragrant sauce. The tomatoes release their juices, blending into a light, tangy sauce that forms the perfect complement to the eggplant. Season with salt, pepper, and a pinch of dried oregano or basil to infuse the sauce with Italian flavors. If you want a little extra richness, add a splash of balsamic vinegar or a spoonful of tomato paste to deepen the flavor.
Once the penne is cooked al dente, toss it into the pan with the eggplant and tomato mixture, allowing the pasta to absorb all the delicious sauce. If the dish feels too dry, a bit of pasta cooking water can be added to help create a silkier sauce.
For finishing touches, a sprinkle of Parmesan or Pecorino cheese adds a creamy, salty element, and a few fresh basil leaves provide a burst of color and freshness. The dish can also be topped with a drizzle of good-quality olive oil for an extra layer of flavor.
Eggplant and tomato penne is a delightful, light yet filling dish, perfect for those who want something satisfying without feeling overly heavy. It’s easy to make, packed with Mediterranean flavors, and can be customized with additional ingredients like olives, capers, or red pepper flakes for a bit of heat. Whether you’re enjoying it as a main or as a side, this pasta dish is a wonderful way to showcase the delicious combination of eggplant and tomatoes.

I followed the steps exactly and somehow it was bland until the parmesan. Maybe I under-salted? Like, I thought I did enough… next time more salt, less hesitation.
The pasta was good but I added too much chili flakes by mistake. Oops!
The steps are super clear and it comes together fast. My kids went back for seconds, which is basically a miracle in my house.
This recipe was amazing! The flavor combinations were spot on. Definitely a repeat in my house!
Tried this tonight—super comforting. The eggplant got really soft and the tomato/garlic combo tasted like my favorite weeknight spot. I added a splash of pasta water and it turned silky.
Disaster! Forgot the garlic and it tasted bland. Gotta follow the recipe next time!
I think I forgot to season it right. Was pretty bland. 🙁
I tried it but the eggplant was mushy. Better luck next time.
I had the same issue with the eggplant! Maybe try less cooking time next time? Just a thought.
Mushy eggplant? I’m not sure what you did wrong, but mine turned out great! Maybe use fresher ingredients?
Eww, eggplant is gross! The texture was weird. I don’t recommend.
I think eggplant can be really delicious if cooked right! Maybe try roasting it next time?
Eggplant does have a weird texture. But honestly, just don’t cook it too long.
Instructions were easy to follow. Family loved it! Will make again.
Pretty good for a weeknight meal. I think my eggplant took closer to 15 minutes though, but the sauce still turned out great with Parmesan on top.
This dish was amazing! I never thought eggplant could taste so good. Will definitely make again!
I used zoodles instead of penne, still good but not like the real deal!
Made this tonight and it’s seriously comforting. The eggplant gets so tender, and the oregano + chili flakes make it taste way more “restaurant” than I expected. I used fresh basil and a little extra Parmesan—10/10.
Yes! The oregano + chili combo is such a cheat code for “restaurant” flavor 😄 I love when the eggplant turns melting-tender like that.
I’m glad you said that—mine sometimes comes out a little bland. How long do you usually cook the tomatoes? I might add more Parmesan too.
Not sure what went wrong, but my eggplant turned mushy. It tasted okay but not great.
I only had crushed tomatoes, so I used them instead of diced—still came out good, just more saucy. Great comfort food.
Ugh, I prefer spaghetti instead of these penne noodles. But still not bad.
I get that! Spaghetti is a classic, but I think the penne holds the sauce better! Give it another shot!
Gonna try this for my family tonight! They love pasta and veggies. Fingers crossed!
meh. I mean it was edible but I expected more. Could use more sauce or cheese. Husband said it was “okay”.
I don’t understand why you would even add eggplant… not for me.
I dunno, I think eggplant is kinda gross. I might add chicken next time.
This was absolutely delicious! The flavors blended so well together. My family loved it!
I think you forgot to mention when to add the chili flakes, but I just added them with the tomatoes. Turned out fine 🤷♂️.
I made this for dinner last night, and my husband loved it! Definitely a keeper.
That’s awesome! I love when a dish is a hit at home. I need to try this recipe soon!
Okay but I think 10 minutes for the eggplant was too short—mine was still a little firm. I ended up cooking it closer to 15 and it was perfect.
Totally agree—10 min didn’t do it for me either. Eggplant can take way longer depending on the size, so 15 seems more realistic.
Hmm I cooked mine exactly 10 and it was fine? Maybe my cubes were smaller. Either way, glad you adjusted it.
Eggplant is gross, won’t be trying this. Thanks but no thanks.
This was amazing! The flavors are just perfect. I added some extra chili flakes for a kick.
Best recipe evr!! Can’t believe how easy it is! 😊
Yummy! But I forgot the cheese. 😅 Next time!
The garlic and oregano made it really pop! Yum!!
This recipe turned out amazing! The eggplant was so flavorful!
I can’t believe there’s no meat in this recipe. Is it gonna fill me up? I guess we’ll see.
Looks delicious! I think it’ll be more filling than you expect. Eggplant is quite hearty!
Super easy! I made it in under 30 mins. I left out the chili flakes since I can’t handle spice. Still yum!
This is just another pasta recipe, nothing special about it and a bit boring honestly.
Pretty good, but I’d add a splash of pasta water when tossing the penne. Mine came out a bit dry. Also next time I’ll use more tomatoes because I love a saucier vibe.
Too many veggies for me, I like my pasta plain. Not for me.
I love eggplant, so I was excited. It turned out delicious but I burned the garlic the first try (oops). Second batch: perfect—garlic cooked gently, no bitterness.
Simple and comforting! My kid ate it (rare win). I used fresh oregano instead of dried and it smelled amazing while cooking.
Followed the recipe and it was kind of bland. Needs more seasoning, like maybe some cayenne or something!!
I’m not sure about using only dried oregano—tasted a little flat until I added fresh basil into the skillet too. Still tasty though.
Maybe it’s just me, but I never like dried oregano. I thought basil would cook the same way as garlic in the pan—like 2 minutes and it’s “gone.” Guess not 😅 Still, flat flavor makes sense. Next time I’ll add basil earlier too.
Totally agree—oregano can taste a bit one-note by itself. I usually do a pinch of fresh basil or even a little extra oregano at the end so it stays bright. Glad you made it work!
