  • 2 large egg whites room temperature
  • 1/4 teaspoon salt

Instructions
 

  • Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper.
  • In a large bowl, mix together the shredded coconut, sweetened condensed milk, and vanilla extract until fully combined.
  • In a separate bowl, beat the egg whites and salt with an electric mixer until stiff peaks form.
  • Gently fold the beaten egg whites into the coconut mixture using a spatula.

      It *does* feel simple, but that’s kind of the point—simple ingredients can still make a great chew. If yours were chewy instead of crunchy, it might just be baking time/heat or not enough browning on the edges. Next time try 2–4 minutes longer until they’re deeper golden.

      Chewy vs crunchy usually means they didn’t dry out enough. Did you use sweetened shredded coconut (not flaked unsweetened)? Also, letting them cool fully on the tray matters—if you pull them too soon they stay soft.

      I dunno, egg whites are tricky sometimes! Maybe they were too cold? I usually throw in a pinch of cream of tartar, seems to help! Anyway, the coconut mix must’ve been tasty!
