Cabbage is often overlooked as just another basic ingredient in slaws and stews, but this Coconut Cabbage Salad gives it a well-deserved spotlight. Itās light, bright, and just the right mix of creamy and crunchy ā a tropical twist on your average salad that brings something truly special to the table.
The heart of the dish is, of course, shredded cabbage ā crisp and refreshing. But what makes this salad stand out is the coconut. Whether itās toasted flakes or a splash of coconut milk in the dressing, the addition brings a subtle sweetness and rich aroma that transforms the humble cabbage into something exotic and satisfying. Itās the kind of flavor that makes you think of beach days and sunshine, even if youāre just eating lunch at your desk.
To round it out, thereās often a tangy, citrusy dressing that ties everything together. Lime juice, ginger, garlic, and perhaps a dash of chili or sesame oil create a balance of flavors ā sweet, salty, sour, and spicy ā that makes each bite interesting. Add-ins like shredded carrots, green onions, or chopped peanuts only make it better.
This salad isnāt just about flavor. Itās also a great option for those who want something healthy, quick, and adaptable. Itās vegan-friendly, naturally gluten-free, and perfect for meal prep since it holds up well in the fridge. Serve it as a side with grilled tofu or fish, or pile it into a rice bowl for a light lunch.

So fresh and crunchy! The lime + soy + sesame combo is surprisingly good with the coconut. I added a pinch of chili flakes and it really popped.
Cabbage? Again? No thanks. Also, sounds like something my grandma would make. Dubious.
Um, why in the world would you put coconut in salad? Seems weird to me.
I tried this and honestly the dressing was kinda oily for me. Sesame oil is strong. I ended up using less and it improved a lot.
This recipe is too weird for me. Cabbage and coconut? Nah… Iāll keep my salads traditional. 1 star.
Could use more instructions like how fine to chop everything. I guessed and the cilantro/mint pieces were too big. Still edible though.
Meh. Cabbage doesn’t belong in a salad. Just saying.
C’mon! Cabbage can be great in salads! It’s crunchy and healthy. Give it a try, you’ll be surprised!
Not bad, but needed more dressing! I added extra lime and it was better. Just my opinion tho.
Yum! Love coconut! š
Super easy recipe, but I donāt have cilantro so I used parsley. Still decent, but I think cilantro would make it taste more āright.ā
Yummm! I made it for a picnic and everyone loved it! š
YUM! It’s fresh and light. I skipped the peanuts cause Iām allergic but still tasty!
Glad you liked it! The coconut adds a nice touch, doesn’t it? I bet it was still crunchy and refreshing without the peanuts!
Way too much lime! Gave me a stomachache. Maybe cut back?
I actually thought the lime was perfect! But everyone has different taste buds, I guess.
Idk⦠coconut cabbage just sounds kinda random. Also mine tasted salty and I didnāt even add extra salt. Not my fave, sorry.
Oof, I get that. Coconut + cabbage is a weird vibe at first, but the lime/soy/honey balance is supposed to make it work. If yours was salty even without extra salt, maybe the soy sauce brand is extra intenseātry less soy next time (or use low-sodium).
Yeah I was thinkin this was gonna be coconutty sweet, but mine also came out salty. Iām like⦠did I mess it up? But no, same thing. Iāll probably skip soy sauce and just use lime + a lil honey next time. Sorry it didnāt hit for you though.
So good! I added some grilled chicken for extra protein and it was a hit with my family.
I wasnāt sure about mixing coconut with cabbage, but wow! It actually works! Nice job.
This was too bland for my taste. Needs some spice! Next time Iāll add chili flakes.
I tried it with toasted coconut and that made all the difference. 10/10 upgrade if youāre not doing it already.
I used toasted coconut (instead of plain) and it tasted way better. The recipe is solid, just donāt skip the tossingāotherwise itās bland.
Love this recipe! I added some grilled chicken for protein. Yum!
I followed it exactly, but my dressing tasted kinda bitterāmaybe my soy sauce was strong? Still ate it, just wouldnāt call it amazing.
Ugh, bitter dressing is so disappointing. If your soy sauce was strong or you measured a little heavy, that could do itāalso sesame oil can get intense if itās more than you intended. Next time try a pinch less soy sauce and a tiny extra lime/honey to balance.
Hmmm, not really my thing. Cabbage is usually in slaw, not salad. Thought it would be better.
This salad is delicious! The coconut adds such a unique flavor. Will def make again!
I totally agree! The coconut really sets it apart. Love the freshness of the herbs too!
The coconut makes it surprisingly good. I expected it to be sweet, but itās more savory-bright. Would 100% make again.
I tried something like this once⦠but I think I used sweetened coconut and it was waaaay off. If you use unsweetened it makes sense. Also, I always eyeball the honeyāmaybe thatās why mine tasted different.
Totally agreeā100% coconut surprised me too. The soy + lime combo keeps it from going dessert-y. Definitely adding this to my repeat list.
I don’t get what all the hype is about. It was just okay for me. Not my favorite.
Absolutely loved this salad! The flavors blend perfectly, especially with the lime juice. Will definitely make again!
This salad is a game changer! So refreshing!
The mint is a little intense for me, but I can see why people like it. Next time Iāll use half the mint and maybe extra cilantro.
I tried it and the cabbage was still a little wet (donāt know why). Also I didnāt have fresh mint so I used dried⦠probably my fault. Flavor was ok, but not great.
I followed it exactly and it came out watery. Not sure if my cabbage was too wet or if the dressing ratios are off, but the leftovers were not great.
Hmm, I think the ratios are a little offā2 tbsp lime + 2 tbsp soy + 1 tbsp honey + 1 tbsp sesame oil is a lot liquid for only 2 cups cabbage. Also soy makes it seem āthinā fast. Next time Iād use less lime or let it sit 5 min then toss again? Otherwise it turns sad.
Sorry that happened! Iāve made it a few timesāwatery usually means the cabbage was sitting wet or got tossed too long. Try squeezing/shaking the cabbage after shredding, and also add the dressing gradually (you might not need all of it).
Tried it exactly as written and it was okay. The coconut is good, but the soy sauce overpowered the cilantro a bit. Still will make again, just tweak ratios.
Cabbage is gross. No offense, but I donāt want to eat this ever! Sorry!
This was super easy to make! Great for lunch.
Okay but whereās the cooking part? lol. Itās fine as a cold salad, but I wish the recipe said to rest it 10 minutes before serving.
I used apple instead of peanuts because I hate them. Still good!
I donāt like cilantro, can I use parsley instead?
Too many flavors for me. Might try it without the mint.
I understand! Mint can be strong. You could use basil or just leave it out. Good luck!
Why would you remove mint? It’s so fresh! Maybe try just a little bit of it.
My cabbage was way too wet at first so I dried it a little. After that it came out really good. The dressing was strong thoughānext time Iāll start with less sesame oil.
Hmm I made this once and mine was also watery, but I think my cabbage was fresh-cut too wet. I didnāt even notice sesame oil being strong though⦠but maybe I used less than the recipe. Still turned out good. Next time Iāll try your way!
Totally get thatācabbage can release a lot of moisture. Drying it a bit first makes sense. And yeah, sesame oil can be intense. Iād probably cut it in half next time too.
Cabbage? Really????
The dressing is flavorful, though. Like, I could drink it (kidding⦠mostly). Tossing takes no time.
Right?? The lime + soy + honey combo is addictive. I also love that itās basically just tossingāno cooking drama.
Tasty salad, but I found it a bit salty with the soy sauce. Next time Iāll start with less soy and add salt at the end. Otherwise the coconut makes it feel special.
Way too salty for me. I used regular soy sauce and had to add extra cabbage and lime to fix it. Would suggest starting with less soy.
Really fresh and crunchy! The lime + sesame oil combo is spot on, and the honey balances the soy well. I added a little extra lime and it tasted even brighter. Will make again.
Okay but⦠is it supposed to be sweet-salty? I feel like honey + soy + sesame oil makes it kinda confusing. Next time I might cut the honey in half. Still pretty good thoughānice texture!
Yes!! Exactly what I was hoping forāfresh, crunchy, and not too sweet. I also did a touch more lime and it really woke everything up.
I made this and it was simple but not flavorful enough for my taste. Maybe more lime? š¤·āāļø
I think you’re right! A bit more lime really could kick it up a notch! š
This salad is soooo refreshing! The coconut really adds a unique flavor. Will definitely make again!
Cabbage salad? Why use cabbage!? Itās like eating cardboard, no thanks. Ugh!
I wasn’t sure about the peanuts… but it worked! Tasty mix of flavors, although a bit too sweet for my taste.
So refreshing! The lime + sesame oil combo makes it feel really vibrant. I added a little extra chili flakes and it was perfect.
Yes!! Lime + sesame oil is such a good comboānever thought to pair it with cabbage like this. Iām stealing the extra chili flakes idea š
Too many ingredients! Why not jus use cabbage and lime? Not impressed!
I was skeptical about the coconut in a salad, but wow! It adds such a nice crunch. This is a winner!
Why is there honey in a salad? That sounds off.
Recipe is simple, but honestly I donāt trust honey + soy + sesame oil together. It tastes like an accident unless youāre careful.
Easy to make! Just threw everything in a bowl, but I forgot the lime juice. Still yum tho!
This salad is absolutely delicious! The combination of flavors is perfect. Thank you!
Totally agree! This salad is a game changer! š
I don’t know about that… cabbage and coconut just sounds weird together, right?
I was skeptical about the coconut and cabbage together, but it actually works! Who knew? Might add some grilled chicken next time.
This salad was so refreshing! I loved the combination of flavors and the crunch from the peanuts. Perfect for summer!
I totally agree! This salad is a summer delight! šš„
Great recipe! Super fresh and light. I used balsamic instead of soy sauce tho, still tasty!
Balsamic instead of soy sauce? That’s interesting! I never thought of that! I’ll give it a whirl next time.
Not a fan. It was too sweet for my taste what with the honey. Maybe less honey would help?
I donāt get the coconut in a cabbage salad⦠cabbage already has a crunch. Still, itās kinda addictive once you taste it. Weird but good.
Iām not usually a cabbage person, but this salad is honestly addictive. The mint makes it taste like a fancy restaurant side.
Okay wowāIām also not a cabbage person, but Iāll try this. The mint + lime combo sounds way too good to skip.
Not sure about the shredded coconut in a salad⦠but I tried it and honestly it worked. The peanuts help a lot.
Shredded coconut in salad??? But ok if itās not dry. Iād maybe toast it first so it has more flavor. Soy sauce + honey + sesame sounds legit though.
Iām surprised it works too, but your point makes senseācoconut + peanuts is kinda the same vibe as those Thai salads. Gonna try it with a little less coconut first.
Isn’t this just coleslaw with coconut? š¤ It’s ok I guess, but I prefer traditional slaw.
This is a great quick salad for hot days. I was skeptical about soy sauce in a salad, but it totally works. Love the crunch from the peanuts.
I made it for lunch and it didnāt last long. Crunchy cabbage, sweet coconut, and that salty soy balance is perfect.
Meh, I’ve had better salads. It was kinda boring after a few bites. š
Good flavors, but Iād cut back on the honey next timeāfelt a bit sweet for my taste. Otherwise, great texture.
Totally agreeāhoney can swing it from bright to kind of cloying. Iāll try cutting it to 1/2 tbsp next time and see if the lime/soy balance out better. Thanks!
I dunno, sounds kinda weird. Cabbage and coconut? Really?
You’d be surprised! The coconut adds a nice sweetness to the crunch of the cabbage. Trust me, it’s good!
Flavor bomb. I used lime zest too and it really popped. Also the peanuts add the perfect crunch.
1 word: Delicious.
Made it for lunch and it was way better than I expected. The dressing is flavorful without being heavy. Next time Iāll chop everything a bit finer.
Easy to make and delicious! Made it for a picnic and everyone loved it. Didn’t even last an hour!
So fresh and crunchy! I added some chili flakes for a kick and it turned out great. š„š„
Chili flakes sound like a good idea! I’m gonna try that next time. Thanks for the tip! š
Yum!! I’m going to make this for my barbecue next weekend. Can’t wait!
This is surprisingly refreshing. The lime + sesame oil combo is spot on, and the mint really wakes everything up.
This is a winner! I made it for meal prep and it held up great. Also, the peanuts add the perfect crunch.
Love this! The peanut crunch is the best partāwasnāt sure about the coconut at first but it works. Good call on meal prep too.
Made it tonight. The coconut + peanuts gives it a really nice texture contrast. I did adjust the soy sauce a bit because mine was kinda salty, but overall super good.
Glad you tried it! š Coconut + peanuts really does make that texture pop. And good call on tweaking the soy sauceāsalinity varies a lot by brand.
Not bad, but Iām not sure the peanuts belong with coconut + mint. It works for me but my partner said it was weird. Could just be personal taste though.
I used almond slivers instead of peanuts because I ran out. Not the same, but still tastyāmore ānuttyā than crunchy.
Super easy and looks fancy for something so quick. I added a squeeze of extra lime and it got even better.
I didnāt have cilantro so I used parsleyāstill tasty, just different. Also, the cabbage got a little softer after sitting, so serve ASAP like it says!
