2 cups chopped romaine lettuce
2 tablespoons chopped fresh cilantro
1 cup diced cooked chicken breast
1/2 cup diced tomato
1/2 cup diced avocado
1/4 cup crumbled cooked bacon
1/4 cup crumbled blue cheese
2 hard-boiled eggs, chopped
2 tablespoons red wine vinegar
2 tablespoons extra-virgin olive oil
1/2 teaspoon Dijon mustard
Salt and pepper to taste


1.In a large salad bowl, combine the romaine lettuce and cilantro.
2.Add the diced chicken breast, tomato, avocado, bacon, blue cheese, and chopped eggs to the salad bowl.
3.In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, salt, and pepper.
