Ingredients
  

  • 2 chicken breasts
  • 8 oz. mushrooms
  • 2 ribs celery
  • 1 onion small
  • 1 cream of chicken soup
  • 1 cream of celery soup
  • 1 package stuffing mix prepared

Instructions
 

  • Cook the chicken breasts until fully cooked, then shred them.
  • Slice the mushrooms.
  • Dice the onion.
  • Chop the celery.
  • In a bowl, mix both cans of soup with milk.
  • Place the shredded chicken in a 9×12 baking pan.
  • Spread the sliced mushrooms on top of the chicken.
  • In a separate bowl, mix the celery, onions, and seasonings with the soups and milk.
  • Pour the soup mixture over the chicken and mushrooms.
  • Spread the prepared stuffing mix on top of the soup mixture.
  • If needed, add a little more water to help the stuffing spread easily.
  • Bake the dish at 350°F (175°C) for about 30 minutes or until the stuffing is browned.

    Why do you bake at 350? That seems too low. I usually do it at 400!

    Nope. 350 for 30 min with stuffing on top didn’t cook through. I ended up microwaving parts and it was a mess. Won’t make again.

      Ugh, that’s frustrating—especially if it was still undercooked at 30 minutes. I’d try covering the dish for the first ~20-30 minutes and then uncovering so the stuffing browns at the end. Also, chicken breast thickness can really change cook time.

      Totally get it—mine turned out a bit more “saucy” than I wanted too. Next time I’ll use less soup/milk or add the stuffing a little later so it doesn’t get drenched right away.

      I don’t think it’s supposed to be super stuffing-y because the stuffing is on top of soup. If you want more flavor, try sautéing the mushrooms/onions first and add stuffing seasoning (or a dash of poultry seasoning) to the soup mix.

      I get what you mean—2 chicken breasts can feel a little skimpy depending on how big the pan is and how much stuffing you use. I usually bump to 3 breasts (or add extra mushrooms) so it’s more filling. Glad it tasted alright though!

    I’m skeptical about using stuffing mix “prepared” without adjusting liquid. I added more milk like suggested but it still came out a bit dry on the edges. Still tasted good though.

    I used low-sodium soups and it still worked. Next time I’ll sauté the mushrooms and onions first so they don’t taste so “raw” (even though baked).
