Ingredients
  

  • 1 pound rib-eye steak at room temperature
  • 1 tablespoon olive oil for cooking
  • 1 cup red wine such as Merlot or Cabernet Sauvignon
  • 2 tablespoons butter unsalted
  • 1 teaspoon fresh thyme chopped
  • to taste salt
  • to taste black pepper freshly ground

Instructions
 

  • Season the rib-eye steak with salt and freshly ground black pepper on both sides.
  • Heat olive oil in a skillet over medium-high heat. Add the steak and cook until desired doneness, about 4-5 minutes per side for medium-rare.
  • Remove the steak from the skillet and let it rest while you prepare the sauce.
  • In the same skillet, add the red wine and bring to a simmer, scraping up any browned bits from the bottom.
  • Reduce the wine by half, then stir in the butter and fresh thyme until the sauce is smooth and slightly thickened.
  • Serve the steak with the red wine sauce drizzled over the top.
