Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the pork slices and cook until browned, about 3-4 minutes.
Remove the pork from the skillet and set aside.
In the same skillet, add the minced garlic and cook for 1 minute.
Add the collard greens and cook until wilted, about 3-4 minutes.
Return the pork to the skillet and add the soy sauce and oyster sauce.
Stir well to combine and cook for an additional 2-3 minutes.
Season with salt and pepper to taste.
