Heat the olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until lightly browned, about 4 to 5 minutes.
Add the onion and cook for 2 to 3 minutes, stirring occasionally, until softened.
Stir in the garlic, Cajun seasoning, smoked paprika, and black pepper. Cook for 30 seconds until fragrant.
Add the sliced cabbage and chicken broth. Toss well to coat, then cover and cook for 8 to 10 minutes, stirring occasionally, until the cabbage begins to soften.
Uncover and continue cooking for 5 to 7 minutes, stirring often, until the cabbage is tender and most of the liquid has evaporated.
Stir in the butter if using, taste, and adjust seasoning if needed. Garnish with parsley and serve hot.
