Instructions
In a large skillet over medium heat, cook the bacon until crispy. Remove from the pan and set aside, leaving the bacon drippings in the skillet.
Add vegetable oil to the skillet and sauté garlic until fragrant.
Add the mixed vegetables to the skillet and stir-fry for about 3-4 minutes.
Push the vegetables to the side and pour in the beaten eggs. Scramble until fully cooked.
Add the day-old rice to the skillet, mixing it with the vegetables and eggs. Pour in soy sauce, and sprinkle salt and pepper to taste.
Fold in the crispy bacon and top with green onions before serving.
