Ingredients
  

  • 2 chicken breasts boneless, skinless
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 3 cloves garlic minced
  • 1 tsp ginger grated
  • 2 tbsp Szechuan sauce
  • 2 tbsp rice vinegar
  • 4 ounces rice noodles cooked according to package instructions
  • 1/2 cup carrots shredded
  • 1/2 cup cucumbers sliced
  • 1/4 cup Green onions chopped
  • 1/4 cup cilantro chopped
  • 1/4 cup peanuts chopped

Instructions
 

  • In a small bowl, combine soy sauce and cornstarch. Add chicken and toss to coat. Set aside.
  • Heat vegetable oil in a large skillet or wok over medium heat. Add garlic and ginger and cook until fragrant, about 1 minute.
  • Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
  • In a separate small bowl, whisk together Szechuan sauce and rice vinegar. Pour over chicken and stir to coat.
  • In a large bowl, combine cooked rice noodles, shredded carrots, sliced cucumbers, green onions, and cilantro.
  • Add chicken mixture to the bowl and toss to combine.

    I like the idea, but cornstarch with soy sauce—does that really thicken? Mine mostly just stayed sticky. Still tasty though!

      I had the same thing, honestly. I followed it and mine was more sticky than glossy. Maybe the cornstarch amount or mixing wasn’t enough? Also I used low-sodium soy once and it didn’t help. Still tasted good tho. Not sure I’d rely on it to thicken.

    Pretty tasty, but my noodles went a little mushy since I cooked them ahead and let them sit. Next time I’ll do everything closer to serving. Still spicy-good.

      Totally get that—Szechuan sauces vary a LOT by brand. I’ve had ones that are basically ā€œsweet-ishā€ and others that are properly fiery. Adding chili oil is the move. Maybe next time try starting with 2 tbsp and taste the sauce before mixing in so you can dial it in.
