1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
8 large eggs
1/2 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
4 large tomatoes, halved
2 tablespoons olive oil
Salt and pepper, to taste


1.In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
2.Add the diced onion, minced garlic, dried oregano, dried thyme, salt, and black pepper to the skillet. Cook for an additional 2 minutes.
3.In a separate bowl, whisk the eggs together. Pour the whisked eggs into the skillet with the beef and onion mixture. Stir to combine.
4.Continue cooking the mixture over medium heat, stirring occasionally, until the eggs are cooked to your desired consistency.
5.While the eggs are cooking, preheat a grill or grill pan over medium-high heat. Brush the halved tomatoes with olive oil and season with salt and pepper.
6.Grill the tomatoes for about 5 minutes on each side, until they are slightly softened and grill marks appear.
7.Serve the beef and egg scramble hot, topped with crumbled feta cheese, chopped fresh parsley, and the grilled tomatoes on the side.
