2 cups cooked rice
2 tablespoons lemon juice
1/4 cup peanuts
1/4 cup cashews
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon urad dal (split black gram)
1 teaspoon chana dal (split Bengal gram)
1 teaspoon turmeric powder
8-10 curry leaves
2 green chilies, slit
Salt to taste
Fresh coriander leaves for garnish


1.Heat oil in a pan over medium heat.
2.Add mustard seeds and let them splutter.
3.Add urad dal and chana dal and sauté until golden brown.
4.Add peanuts and cashews and fry until golden brown.
5.Add curry leaves and green chilies and sauté for a minute.
6.Add turmeric powder and mix well.
7.Add cooked rice and mix gently to combine all the ingredients.
8.Add lemon juice and salt, and mix well.
9.Garnish with fresh coriander leaves and serve hot.
