Irish Stew

February 27, 2025

Irish stew is a comforting classic that’s been warming hearts and bellies for generations. Deeply rooted in Ireland’s culinary traditions, this dish brings together simple ingredients in a way that feels rustic, nourishing, and soul-satisfying. Originally made with mutton, onions, and potatoes, Irish stew has evolved to include lamb, carrots, parsnips, and sometimes even barley, depending on the region and the cook.

At its heart, Irish stew is about making the most of what’s available. It reflects the spirit of traditional Irish cooking, where resourcefulness and flavor go hand in hand. The long, slow simmering process tenderizes the meat and allows the vegetables to absorb all the rich, savory broth. It’s not flashy or complicated, but that’s exactly why it’s so beloved.

What sets Irish stew apart is its depth of flavor. The broth is rich and earthy, thanks to the combination of root vegetables and meaty bones. Each spoonful delivers warmth and comfort, making it the perfect dish for cold, damp days. Served with a chunk of crusty bread or a scoop of buttery mashed potatoes, it’s the kind of meal that brings everyone to the table and keeps them there a little longer.

For many, Irish stew is more than just food. It’s a connection to heritage, family, and memory. Whether enjoyed at a pub in Dublin or around the kitchen table on a rainy night, it carries with it a sense of tradition that never really goes out of style. It’s often a centerpiece at St. Patrick’s Day gatherings but equally fitting as an everyday winter staple.

Over the years, modern twists have added new dimensions to the stew. Some cooks use Guinness for added richness, while others add fresh herbs like thyme or rosemary. But no matter how you adapt it, Irish stew remains a dish that’s all about comfort, community, and honoring the old ways with every simmering pot. It’s a bowl full of Irish hospitality, served hot and hearty.

This stew is fantastic! The lamb was super tender and the flavors were perfect! Definitely going to make it again. 🍲

Really? I thought it was kinda bland. Maybe I didn’t cook it long enough? My stew just didn’t have that pop!

    2. 5 stars
I totally agree! This stew is a game changer. The tender lamb really makes it special. I’m thinking of adding some garlic next time!

  2. 2 stars
I only have chicken stock. Can I use that? Or will it ruin everything?

    1. User avatar andrea.bauch7 says:

      4 stars
Using chicken stock should be fine! It’ll change the flavor a bit, but still tasty. Just go for it!

  3. User avatar jere.schumm says:

    4 stars
I skipped the thyme because I don’t have any and still turned out yummy! Thanks for sharing!

    1. User avatar Cornell Tillman says:

      5 stars
Glad to hear it turned out yummy! Thyme usually adds a nice flavor, but sometimes you gotta work with what you have. 😊

    2. User avatar NAFO.SUPREMACY says:

      3 stars
Skipping thyme? I don’t know about that… ain’t the stew supposed to be all flavorful?

  4. User avatar anibal.smitham says:

    4 stars
Solid comfort food. I was a little skeptical about “just” thyme, but it ended up tasting really balanced. Next time I might slice the onions a bit thinner so they fully dissolve, but overall great.

  5. User avatar charmaine.treutel2 says:

    5 stars
Potatoes & lamb? Mmm, what more do ya need? This is a classic for sure!!

  6. User avatar betsey.rosenbaum98 says:

My grandma used to make a better version of this. She always said use more carrots. This one was just okay.

  7. User avatar britt.wiegand93 says:

I don’t get why everyone loves this. It turned out a bit bland for me. Maybe I’m missing something?

  8. 5 stars
Yummmm! My kids devoured it! So easy to make, and the house smelled amazing!

  9. User avatar sherwood.gorczany88 says:

I don’t know, it seems a bit bland to me. Might try adding garlic next time? But overall it wasn’t bad.

  10. User avatar tosha.witting says:

    3 stars
Too much onion! Next time I’ll half it. But it’s easy and warm, so I’ll give it a 3.

    1. User avatar halflife4 says:

      4 stars
I actually love a lot of onions in my stew! Makes it so flavorful. But I get it if you want to tone it down. 😊

    2. User avatar Septimus says:

      3 stars
I think the onions are part of the magic! Half sounds too little but hey, it’s your stew.

  11. User avatar Rusty Fossat says:

    2 stars
I followed the recipe, but the meat didn’t get tender. Maybe my lamb was not good? 2 stars.

    1. User avatar Valencia Rogahn says:

      4 stars
Maybe try cooking it longer next time? 2 hours isn’t always enough for lamb.

  12. User avatar sammy.stroman39 says:

    5 stars
This stew is delicious! So hearty and filling, perfect for a cold night. Will definitely make again!

    1. User avatar norris.bode says:

      2 stars
I don’t know, sounds a bit too simple. Can a stew really be that good without some spice? Just my opinion though.

    2. User avatar Skarner says:

      5 stars
I totally agree! This stew is the best, especially when it gets cold outside. I added some turns for a little zing! Yum!

  13. User avatar harland.gulgowski42 says:

    2 stars
Honestly, who puts lamb in stew? Should’ve just used beef. Disappointed.

  14. User avatar oPandariaNo says:

    4 stars
Is it really Irish if there’s no Guinness in it? Just saying! But I guess it still looked nice.

  15. User avatar gerald.russel1988 says:

    2 stars
Ok but why lamb shoulder? I used pork and it turned out kinda meh. Maybe I should’ve used different stock. Not my favorite.

  16. User avatar chere.vonrueden39 says:

    2 stars
I don’t know, but my stew turned out kinda bland. Maybe I used too much water? Not sure. I call it soup now.

  17. User avatar wellRespected says:

    4 stars
Simple and hearty! Used chicken instead of lamb because that’s what I had, still turned out great!

    1. 5 stars
Glad to hear it worked with chicken! Sometimes you gotta use what you got! 😊

  18. User avatar taylor.osinski64 says:

    4 stars
Yummy 😋! I made this on a chilly evening, and it warmed my soul! So hearty and filling!

    1. User avatar trinidad.huel says:

      5 stars
So glad to hear that! It’s the perfect comfort food for cold nights! 🙌

  19. 2 stars
Eeh, not great. It was too salty for us, maybe I shoulda paid more attention to the seasoning.

  20. User avatar cortez.marquardt2019 says:

    2 stars
This is basically a stew, not really “Irish” unless you have Guinness and like… a fiddle playing in the background lol. But anyway it worked and tasted homey.

  21. User avatar joe_banana says:

    3 stars
I think i put too much salt lol. But still tasted good. Will try again!

  22. User avatar carissa.stiedemann says:

    4 stars
Who puts thyme in a stew? I just used whatever herbs I had and it was still good! Anyway, nice recipe.

  23. User avatar len.mills76 says:

    4 stars
Mine needed more pepper than 0.5 tsp. Also I used 1 kg potatoes AND it was almost too hearty, but my family loved it.

  24. User avatar philip.bailey98 says:

    4 stars
I was skeptical about using lamb, but wow! This recipe really changed my mind. So delicious!

    1. User avatar maricruz.mccullough1982 says:

      2 stars
I dunno, lamb is kinda greasy. I prefer beef for stew. 🤷‍♂️

    2. User avatar lyda.effertz says:

      5 stars
I’m glad to hear you enjoyed it! Lamb can be a game changer in stews, right? 🥘

  25. User avatar Super Saiyan 2 Vegeta says:

    5 stars
This stew is a game changer! I added some Worcestershire sauce and it was fantastic. My family loved it!

  26. User avatar Vroomfondel says:

    4 stars
I like the straightforward steps, but 2 hours felt a little short for my lamb shoulder. I ended up simmering closer to 2.5–3 hours until it was truly tender. Still delicious though, especially the thyme.

    1. User avatar margarito.buckridge14 says:

      5 stars
Totally agree—lamb shoulder can be stubborn. I’ve found 2 hours is fine for smaller chunks, but closer to 3 hours is usually where it gets that fall-apart tenderness.

  27. User avatar brent.donnelly says:

    4 stars
The instructions are simple and actually doable. My onions caramelized a bit past softened (oops), but the stew still tasted amazing.

    1. User avatar jennifer.reilly says:

      4 stars
Huh, I thought the onions were supposed to just “soften” not caramelize… but ok. If you burnt them, wouldn’t it get bitter? Glad yours worked though. Next time I’ll watch closer lol.

    2. 5 stars
Love that it still turned out amazing! Onions going a little too far is honestly the best mistake—more depth than you expect 😄

  28. User avatar terry.mertz says:

    3 stars
I’m not sure about 1 kg potatoes + 1 kg lamb—way too much starch for me. I cut the potatoes in half and it was much better. Still good though.

    1. 5 stars
Totally get that—1 kg potatoes can overwhelm it if you’re not expecting it. Halving them sounds like the perfect fix. Glad it still worked for you!

    2. 4 stars
I actually like the thick, starchy vibe in Irish stew, but yeah depends on portion size. What cuts of lamb did you use—shoulder is pretty forgiving though.

  29. 3 stars
Yum! A good ol stew!! One of my favorite comfort foods. I used chicken though. Still good!

  30. User avatar coretta.orn1959 says:

    5 stars
This stew is AMAZING! Tastes just like my grandma used to make. Perfect for cold nights!

  31. User avatar tiffiny.kunde1977 says:

    5 stars
2 hours simmer is no joke. I started it before dinner plans and lost track of time 😂 But the lamb was fall-apart good.

    1. User avatar Restless Draugr says:

      5 stars
Right?! 2 hours sounds easy until you’re like “wait… what time is it?” 😂 The lamb really does turn out fall-apart though.

    2. User avatar lorenzo.jenkins2013 says:

      4 stars
I simmered mine 2 hours exactly and it was still a little tough at the end. Next time I’ll go closer to 2.5. Your timing though—spot on.

  32. 3 stars
Had to substitute the lamb with chicken because I couldn’t find any. Still turned out okay, I guess.

  33. User avatar Daedric Prince says:

    5 stars
Yum!! I even added some peas and it was a hit! Will make again for sure!!

  34. 1 star
I don’t like soggy potatoes, but that’s what I got here. Not my fave.

  35. User avatar bertram.funk3 says:

    5 stars
Made this for St. Patrick’s Day and it smelled amazing while simmering. Lamb turned super tender and the onions really melted into the sauce. I added a splash more stock when it got too thick, but otherwise perfect.

  36. User avatar brent.torp1 says:

    3 stars
I tried it and honestly it tastes kinda bland? I kept the salt to “to taste” and maybe was too shy. Also mine simmered closer to 1.5 hours, so maybe that’s it.

    1. 4 stars
Totally get that—Irish stew can end up bland if the salt’s too conservative. I usually start with about 1 tsp per pot and then adjust near the end, since simmering can mellow everything out.

  37. User avatar shavon.okon says:

    5 stars
Wow!! So good! I ate it for breakfast too! 😄

  38. User avatar nilsa.hahn22 says:

    3 stars
Sounds delicious but isn’t Irish stew usually made with beef? Idk, just asking.

    1. User avatar NAFO.SUPREMACY says:

      5 stars
Yes, but lamb is traditional for Irish stew! It’s really tasty, you should give it a try!

  39. 2 stars
Was this recipe even tested? My stew didn’t taste like anything. Kinda sad.

  40. User avatar Tom Bombadil says:

    1 star
uhhh I don’t get why lamb shoulder + 1 kg potatoes… seems like it would be too much starch. But I guess stew is stew. I’ll try it once I’m not busy.

    1. 4 stars
Totally get the starch worry, but the potatoes basically turn into the stew’s thickener once they simmer for 2 hours. If it feels too starchy next time, just use a bit less or cut them smaller/into bigger chunks.

  41. User avatar Spider Guardian says:

    5 stars
    Yummy.

    1. User avatar jesenia.gutmann43 says:

      5 stars
Right?! The browning + that slow simmer makes it so good—almost tastes like it’s from a proper pub.

  42. User avatar retta.gulgowski27 says:

    5 stars
This stew was so hearty and filling! My family loved it, I will definitely make it again.

    1. User avatar josh.crona0 says:

      5 stars
So glad you and your family enjoyed it! It’s one of my favorites too! 😊

  43. User avatar Demetria Lemke III says:

    5 stars
Yummy! Perfect for a cold evening. Just added some garlic for extra flavor.

  44. User avatar kathryne.schultz1996 says:

    3 stars
I love thyme, but 2 sprigs felt like not enough? I couldn’t really taste it. Maybe my thyme was weak. I’d add a bit more next time.

  45. User avatar ShanksOnePiece says:

    5 stars
This Irish stew is amazing! The flavors are spot on and so hearty. My family devoured it in no time.

  46. 4 stars
Easy to follow recipe. I added some Guinness and it was even better. 😊

    1. User avatar lynelle.casper72 says:

      5 stars
Guinness sounds like a great twist! I gotta try that next time. Thanks for sharing! 😄

    2. User avatar Tartarus says:

      2 stars
I don’t know about using beer in stew… Seems weird. Is it really better?

  47. User avatar jerri.zemlak2023 says:

    5 stars
Absolutely loved it! The lamb was so tender. Made it for my friends and they couldn’t stop eating! Thanks!

  48. User avatar efrain.beer1955 says:

    5 stars
This is exactly the cozy stew I wanted. Browning the lamb really makes a difference—deep flavor and not just “boiled meat.” Followed the 2 hours and it came out tender.

  49. User avatar bernardo.mraz68 says:

    1 star
What’s the point of this? Just boil some meat and add potatoes. No need for fancy stuff!

  50. User avatar armando.stark says:

    5 stars
Made this for my family and it turned out ridiculously tender—like it just fell apart. Browning the lamb definitely matters. Delicious comfort food!

  51. User avatar kristal.feest says:

    4 stars
The timing is spot on. 2 hours simmer and the lamb is perfect. I used beef stock because that’s what I had—still great.

    1. User avatar hermila.kuhic says:

      5 stars
Love that—glad the timing worked for you! Using beef stock makes total sense too; it’ll just give it a slightly deeper flavor. 😊

  52. 5 stars
Made this last night and it turned out so cozy. Browning the lamb for real makes a big difference—my onions also caramelized a bit and it was super flavorful. Perfect with a little extra black pepper.

    1. User avatar erin.wilkinson says:

      5 stars
Totally agree—browning the lamb is the secret. I’ve found the onions caramelizing a bit makes it even richer. Love the cozy vibes!

  53. 3 stars
Not bad, but my potatoes kinda broke down into the stew. Next time I’ll quarter them a bit larger or add them later. Also, I used chicken stock and it tasted slightly different—still fine, just not as rich.

  54. User avatar mathWizard says:

    2 stars
2 hours simmering?? That’s way too long lol. I did it closer to 1 hour and the lamb was still chewy. Also my potatoes broke down, so maybe my cut size was off. Flavor was okay though.

  55. User avatar sandra.orn43 says:

    4 stars
I followed it pretty closely, but I found it a bit bland until I added extra salt. After that, wow. Also, my potatoes broke down a little but it tasted amazing.

    1. User avatar oPandariaNo says:

      5 stars
Glad it turned out! Irish stew can definitely need a bit of extra salt—especially depending on how salty your stock is. And potatoes breaking down a little is actually pretty normal; it thickens it up.

  56. User avatar aileen.stark1965 says:

    4 stars
Overcooked my carrots. I know, my fault. Still, the broth was rich and the smell while simmering was unreal. Will attempt again carefully.

  57. User avatar maxwell.graham says:

    2 stars
Wait… no Guinness? No barley? This doesn’t feel super Irish to me 😅 I know it’s “Irish stew,” but I’m skeptical. Flavor was okay, but I missed the heartiness I expect from the classics.

  58. 3 stars
I tried to brown the lamb but the pot was too crowded. Ended up more like steaming. Next time I’ll do smaller batches. Flavor was good anyway.

  59. User avatar Falmer Shaman says:

    2 stars
meh. too much potato for my taste, an’ the lamb took longer than 2 hours. still, not bad.

  60. 5 stars
Can confirm: fresh thyme > dried. I used dried once and it was like… grassy water. This version smells like a real pub stew.
