2 cups cooked rice
1 cup chopped tomatoes
1 cucumber, peeled and diced
1 red onion, thinly sliced
1 cup feta cheese, crumbled
1/4 cup Kalamata olives, pitted and halved
2 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon dried oregano
Salt and pepper to taste


1.Preheat the oven to 375°F (190°C).
2.In a large mixing bowl, combine the cooked rice, chopped tomatoes, diced cucumber, thinly sliced red onion, crumbled feta cheese, and halved Kalamata olives.
