Morning Burrito

August 6, 2024

There’s something deeply satisfying about starting your morning with a warm, flavor-packed burrito. The morning burrito is a breakfast classic for a reason – it’s portable, customizable, and filled with the kind of hearty ingredients that keep you full well into the day. Whether you like yours spicy, cheesy, loaded with protein, or all of the above, a morning burrito has you covered.

At its core, a morning burrito is about balance. Scrambled eggs offer soft, fluffy texture and protein. Crispy bacon or sausage adds a savory, smoky bite. Potatoes bring comfort and substance, while cheese melts into everything for that perfect creamy finish. Wrap it all in a soft tortilla and you’ve got a meal that checks every box.

But the beauty of a morning burrito lies in how easy it is to adapt. You can go vegetarian with black beans, sautéed peppers, and avocado. Or make it spicy with jalapeños and a drizzle of hot sauce. Want a lighter version? Use egg whites, roasted veggies, and skip the meat. Everything works here because the format is so forgiving.

These burritos are also ideal for meal prepping. Make a batch over the weekend, wrap them in foil or parchment, and store in the fridge or freezer. A quick reheat in the morning and breakfast is served – no stress, no mess. Pair with a cup of coffee or fresh juice and you’re ready to take on the day.

Whether you’re grabbing it on your way out the door or sitting down for a slow morning at home, the morning burrito is a reliable go-to. It brings warmth, flavor, and comfort all in one neat little package.

This recipe is made by John P. Graham.

  • eggs scrambled in butter
  • potatoes cubed and boiled, cooked
  • salsa optional
  • shredded cheese
  • jalapeños optional
  • Tomatoes optional
  • onions optional, raw or cooked with meat
  • flour tortilla shells 12 inch
  • olive oil extra virgin or cooking spray
  • butter for cooking and to keep tortillas pliable

Instructions

Cook Meat:

  • In a skillet, cook your meat of choice (hamburger, 80% lean preferred) with shredded onions for added flavor until the meat is browned and onions are tender. Set aside.

Cook Potatoes:

  • Boil cubed potatoes in hot water until they are tender. Drain and set aside.

Scramble Eggs:

  • In a separate pan, scramble the eggs in butter until fully cooked. Set aside.

Prepare Tortillas:

  • Heat a large 12-inch skillet or pan over medium heat. Lightly coat with olive oil or cooking spray.

Assemble Burritos:

  • Add a portion of cooked meat, scrambled eggs, and cooked potatoes.
  • Top with salsa, shredded cheese, jalapeños, tomatoes, and raw onions (if using).

Wrap and Cook Burritos:

  • Fold the sides of the tortilla over the filling and roll it up tightly.
  • If desired, wrap the burrito in aluminum foil to keep it together or use toothpicks to hold it in place.

Bake Burritos:

  • If you prefer a baked burrito, preheat your oven to 350°F (175°C).
  • Place the wrapped burritos on a baking sheet and bake for 20 minutes until heated through.
  • Optional: Sprinkle additional shredded cheese over the top of the burritos before baking.

Serve:

  • Remove the burritos from the oven and let cool slightly before serving.
  • Enjoy immediately, or wrap in foil for storage in the refrigerator or freezer.

Meh. I think it needs more seasoning (salt/pepper, maybe cumin/chili powder). It tasted a little bland until I added extra salsa. Still filling, just not super flavorful as written.

  2. User avatar wellRespected says:

    3 stars
Why do you guys put salsa? It’s just hot sauce not a salad. Keep it simple!

  3. User avatar Peregrin Took says:

    5 stars
So delicious! Even my picky husband loved it. I’ll definitely make this again!

    1. User avatar Hasimir Fenring says:

      5 stars
Sounds great! I’m glad your husband enjoyed it. Can’t wait to try it myself! 🌟

  4. 5 stars
    5 stars. Done.

    1. 5 stars
Nice! “Done” is the best review 😄 Did you add salsa or keep it simple?

  5. 4 stars
I made something like this, but I added cilantro and it really popped. Also I used turkey instead of hamburger and it still worked great.

    1. User avatar rey.kreiger says:

      5 stars
Cilantro really does make a difference—glad it popped for you! I love the turkey swap too; it usually stays a bit lighter but still gets flavorful with onions.

    2. User avatar christian.romaguera1 says:

      4 stars
Wait, you used turkey?? I thought it would be dry compared to hamburger. But if you say it worked, I’ll try. I might even keep the jalapeños and add extra cheese.

  6. User avatar juliana.koch says:

    2 stars
meh. Not my thing. Burritos should be simple, right? 🙄

  7. User avatar mathWizard says:

    4 stars
Wish the instructions had the whole method, but what you provided already sounds legit. I’d add the potatoes back in and warm everything together.

  8. User avatar elfriede.wisoky57 says:

    4 stars
Good recipe! Just need to add more cheese! Who doesn’t love more cheese? 🧀

  9. User avatar cordie.schuppe says:

    3 stars
Wait… it stops at step 2. 😅 Still, the meat/onion part sounds great. Can you share the rest of the instructions?

    1. User avatar Genghis Khan says:

      2 stars
Wait what? Step 2 is literally the only one I see. I guess you just eat it after browning the meat? 😅 Either way, onions + 80% lean sounds okay, but I’d need the steps for eggs and tortillas.

    2. User avatar tissues_with_issues says:

      5 stars
Ahh sorry about that—yes, the recipe text got cut off. After step 2, you’ll scramble the eggs, warm the potatoes, then assemble in the tortillas with cheese/salsa/jalapeños and fold. If you want, I can write the full step-by-step out properly 😅

  10. 3 stars
Do I really need butter? Isn’t that unhealthy?

  11. User avatar Dremora Lord says:

    5 stars
This burrito is a game changer! I added some avocado, and wow, delicious! 😍

    1. 2 stars
Avocado?! Is that even a thing in a burrito? Never tried it… 🤨

    2. User avatar evan.cartwright20 says:

      5 stars
I totally agree! Avocado just makes everything better. 🥑

  12. User avatar Sona Hackett says:

    5 stars
Meat + eggs + potatoes + cheese is basically breakfast perfection. If you warm the tortillas properly, it’s unbeatable.

  13. User avatar Gandalf the Grey says:

    4 stars
My family would demolish this. Use real butter for the tortillas and it’ll taste like diner food.

  14. 4 stars
I didn’t have any onions so I left them out. Still turned out pretty good.

    1. User avatar edwardo.jones1974 says:

      4 stars
Glad it turned out good! Onions are just one option. Sometimes less is more!

  15. User avatar Teller of Treasures says:

    5 stars
Simple and filling—80% lean is a good call. I’d add a little garlic and it’d be perfect for me.

    1. User avatar Ashley O'Reilly says:

      5 stars
Garlic would totally work in this—especially with the onions while the meat browns. Nice idea!

  16. User avatar Thomasena Ritchie says:

    2 stars
I only wish the instructions were complete. It just ends at step 2. Like… what do you do with the potatoes and tortillas after? Still, I’m intrigued.

  17. User avatar Oolon Colluphid says:

    3 stars
Pretty good! But honestly, I don’t think the onions are necessary. They kinda ruin the taste if you ask me.

    1. 5 stars
I totally disagree! The onions add so much flavor. Without them, it’s just boring!

  18. User avatar roosevelt.parisian39 says:

    2 stars
This seems too complicated for breakfast. I prefer a simple bowl of cereal.

  19. User avatar rocco.abernathy23 says:

    4 stars
Honestly, I thought it would be bland, but it was packed with flavor! I didn’t even add salsa.

  20. User avatar karl.ullrich3 says:

    3 stars
But how do u keep the tortillas from tearing? Mine always break.

    1. User avatar tissues_with_issues says:

      2 stars
I dunno, maybe use warm tortillas? Mine never break, lol.

    2. User avatar ronny.gaylord says:

      4 stars
I always cook the tortillas on low heat for just a few seconds on each side and it works for me! Just don’t overdo it.

  21. User avatar shasta.jerde29 says:

    5 stars
Yummy! My kids loved it. They even asked for seconds! 👍

  22. User avatar christal.hill1981 says:

    2 stars
I’m skeptical about “morning burrito” because burritos are messy. Like, how do you keep it from falling apart when you add all the optional stuff?

  23. User avatar quentin.willms72 says:

    5 stars
This burrito is a game changer! So flavorful and filling. I added avocado too. Yum!

  24. User avatar clay.bogisich25 says:

    3 stars
Only have a breakfast burrito, right? But the instructions are kinda missing steps after browning the meat. Still, the ingredients sound tasty.

  25. User avatar Hotblack Desiato says:

    5 stars
Great recipe! I made it with turkey meat and it was delicious. Will definitely make again!

  26. User avatar delpha.stokes says:

    3 stars
Potatoes boiled then added? I tried that and they were kinda bland unless you salt them good. Next time I’ll roast/cook them in the skillet a bit.

    1. 3 stars
Wait so you boil then add to burrito? I feel like it needs more flavor from the start—like garlic powder or even taco seasoning with the meat. Otherwise it’s just… potato and sadness 😅

    2. User avatar sueann.ruecker84 says:

      5 stars
Yeah, boiling potatoes can totally leave them bland. A good salt at the water stage + a little olive oil/butter in the skillet after usually fixes it. Roasting or pan-frying sounds spot on.

  27. 5 stars
Really great recipe! I added some avocado and it was delish!

    1. User avatar phuong.stamm says:

      2 stars
I don’t get why everyone adds stuff like avocado. The recipe is already great as is!

    2. User avatar anonymous_hacker says:

      5 stars
Avocado sounds like a perfect addition! I’ll have to try that next time. Thanks for sharing!

  28. 4 stars
Salsa is like, totally necessary though. Can’t believe it’s optional. Just saying.

    1. User avatar adan.feest84 says:

      5 stars
I totally agree! Salsa just makes everything better, especially in a burrito. Can’t imagine skipping it!

  29. User avatar chong.rolfson2010 says:

    3 stars
If you’re already using butter for the tortillas, why not just use all butter? Also “potatoes cubed and boiled, cooked” is a little clunky, but I get what you mean.

  30. User avatar antone.kling28 says:

    1 star
Too many ingredients for a burrito!!! Just scrambled eggs and cheese is best.

    1. User avatar Blitzcrank says:

      4 stars
I get your point, but the extra ingredients make it more filling and tasty! Just give it a try! 😊

  31. 4 stars
Simple and hearty. Extra virgin olive oil instead of butter is nice, but honestly butter on the tortilla is the best part. I’m team butter.

  32. User avatar Tom Bombadil says:

    3 stars
I don’t think you need all those ingredients. Just eggs and a tortilla is fine.

  33. User avatar irene.halvorson says:

    3 stars
Not sure about boiling potatoes and then just… putting them in. Could turn watery. Maybe bake or fry them a bit first?

  34. 4 stars
    Burrito for breakfast!

  35. User avatar carisa.barrows83 says:

    3 stars
Seems missing a few steps? Like how you scramble eggs and assemble/heat the tortillas. I had to guess and it turned out okay, but not mind-blowing.

    1. User avatar Dremora Lord says:

      4 stars
Yeah I get what you mean. I assumed the “assemble” part was obvious, but the egg scrambling + warming/handling tortillas can be its own step. Glad yours turned out okay though!

  36. 3 stars
Okay but where’s the rest of the steps? 😅 Still, the combo of browned meat + potatoes + eggs sounds legit.

  37. User avatar Vroomfondel says:

    3 stars
Morning burrito… but only got step 2? 😅 Still, scrambled eggs + potatoes + salsa is a winning combo.

  38. 1 star
Burritos for breakfast? Who even does that? My kids wouldn’t eat this. Stick to cereal.

  39. 5 stars
Gotta try this with jalapeños and extra cheese. Also, butter to keep tortillas pliable is genius. Yum.

    1. User avatar lorraine.mitchell1951 says:

      5 stars
Yes! Jalapeños + extra cheese is the move. And that butter for keeping the tortillas pliable—so much better than they get dry and crack. Yum indeed 😄

  40. User avatar exie.green97 says:

    2 stars
I tried it but my potatoes came out a bit mushy—maybe I boiled too long. Also I forgot to keep the tortillas pliable, they cracked.

    1. User avatar newton.leffler1954 says:

      4 stars
Aw man, sorry that happened! Mushy potatoes usually means they were boiled a bit too long—try cutting them slightly bigger next time and check them way earlier (you want tender but still hold their shape). And for the tortillas: I usually warm them in a dry pan for a few seconds per side, then keep them covered with a clean towel so they stay pliable. Hope it works better next try!

  41. User avatar eboni.schamberger7 says:

    5 stars
This sounds like the kind of burrito I can actually make on a busy morning. Browning the meat with onions + scrambled eggs sounds perfect. I’d add more salsa though—optional is my least favorite word here 😅

  42. User avatar cordelia.white77 says:

    3 stars
The instructions are super short though—where’s the step for assembling and baking/frying the burrito? I kinda guessed and it turned out okay, but I think it could be clearer.

  43. User avatar Vroomfondel says:

    4 stars
I followed it mostly, but I used cooking spray instead of olive oil and it still tasted fine. My onions were a bit too raw though—maybe I should cook them longer with the meat.

  44. User avatar clint.bednar48 says:

    1 star
Waste of time. Not the best burrito I’ve had. Taco Bell is better.

  45. User avatar kayleen.wisoky says:

    2 stars
Way too many ingredients for a breakfast burrito! People just buy them at a store!

  46. User avatar lyman.tromp1960 says:

    4 stars
I don’t like tomatoes so I left those out. Still tasted great!

  47. User avatar fred.shields64 says:

    5 stars
I made this for breakfast and my kids LOVED it. Thank you!

    1. User avatar berta.ortiz1957 says:

      2 stars
Really? I thought burritos were for lunch or dinner… breakfast burritos are weird.

    2. User avatar corey.jast says:

      5 stars
That’s awesome! My kids are picky eaters, but I’m gonna give this a shot. Thanks for sharing!

  48. 2 stars
Seems kinda basic. Where’s the spice? 😒

  49. User avatar jefferson.rath98 says:

    4 stars
Honestly, it’s good but next time I’ll add more onions. Like, a lot more. The flavor won’t disappoint.

  50. User avatar Miss Reta Huels says:

    3 stars
I’m a beginner so I needed clearer directions. Like how much salsa, how many minutes to scramble eggs, and when to warm tortillas. But the ingredient list is good.

  51. User avatar osvaldo.gleason23 says:

    5 stars
This looks amazing! Can’t wait to try it! 🌯

    1. 2 stars
Looks good, but how do you know it will taste good? Too many ingredients!

    2. User avatar Miss Victoria Halvorson says:

      5 stars
Thanks! You’re gonna love it, it’s so filling! 😋

  52. User avatar cristin.johnston1988 says:

    2 stars
Do you really need all those ingredients? I think it’s too much work for breakfast.

  53. User avatar eusebia.boyer33 says:

    3 stars
Not bad but I think it’s missing something. Needs a bit more spice maybe?

    1. User avatar norah.gerhold28 says:

      5 stars
I totally agree! I added some cayenne pepper and it really kicked it up a notch!

    2. User avatar Sunday Ratke says:

      3 stars
Nah, I think it’s fine the way it is. Sometimes less is more!

  54. 4 stars
I wasn’t expecting much, but it turned out great! Easy to follow. Thanks!

    1. User avatar Hotblack Desiato says:

      5 stars
So glad you liked it! The tortillas make it extra yummy. 😄

  55. User avatar Ford Prefect says:

    4 stars
Can I use chicken instead of hamburger? Asking for a friend.

  56. User avatar jerrod.funk37 says:

    5 stars
This is my kinda breakfast. Jalapeños + cheese = happy me. Extra virgin olive oil in a skillet also makes it feel fancy 😂

  57. User avatar cornelius.stoltenberg86 says:

    4 stars
“salsa optional”?? Nah. That part is not optional in my house.

  58. User avatar chris.wolff2008 says:

    3 stars
    I dunno, isn’t 80% lean a bit too greasy? I prefer 90% lean…

  59. User avatar terminatorXYZ says:

    4 stars
Not gonna lie, I was skeptical about putting potatoes in a breakfast burrito like that, but it worked! I used leftover roasted potatoes and it was way easier. Next time I’ll warm the tortillas better so they don’t crack.

  60. User avatar benton.schuppe97 says:

    2 stars
Is hamburger really breakfast food? I think I’ll stick to bacon next time.

    1. 2 stars
Nah man, that’s straight up wrong. Breakfast shouldn’t be a burger! Stick to eggs or oatmeal. 😅

    2. User avatar dian.abbott49 says:

      5 stars
I get where you’re coming from, but you gotta try it! Breakfast can be anything you like. Burgers are great anytime! 🍔

  61. User avatar wilber.kassulke says:

    5 stars
Absolutely loved this recipe! The burritos turned out so delicious and filling. Will make again for sure!

  62. User avatar Leto II Atreides says:

    3 stars
Burrito is good, no salsa tho! I just used ketchup. Is that weird? 🤔

  63. User avatar Gail Andrews says:

    2 stars
Ehh. Burritos should have more seasoning than just onions and salsa. Like add garlic powder or cumin. Still, could be fine.

    1. User avatar Ted Hessel says:

      5 stars
Yeah, I get you. Onions + salsa is kinda light—cumin or garlic powder would make a big difference. I’d also add a pinch of chili powder or smoked paprika next time.

    2. User avatar wellRespected says:

      3 stars
Idk, onions and salsa do flavor it enough for me. Like if you use a good salsa and melt cheese inside, it’s fine. Plus, cumin sometimes makes it taste too “taco” lol. I would add jalapeños tho.

  64. User avatar tawna.lang says:

    5 stars
Yumm!! I put beans inside too, haha, totally worth it! 😊

    1. User avatar quintin.bernier1995 says:

      5 stars
Beans sound like a great addition! I might try that next time. 😊

  65. User avatar Oolon Colluphid says:

    3 stars
Potatoes cubed and boiled… okay but why not hash them in the pan for better crunch? Feel like it’ll be a little soggy otherwise.

  66. User avatar harley.kreiger1952 says:

    4 stars
I made this burrito, but I used chicken instead of hamburger. Still turned out great!

    1. User avatar damion.parker83 says:

      5 stars
Glad it worked out! Chicken is a good option too. I like experimenting with different meats.

    2. 2 stars
I dunno, chicken in a burrito? Seems a bit weird to me. I prefer sticking to the recipe.

  67. User avatar kendrick.rau1996 says:

    3 stars
I tried making this with turkey meat and it just wasn’t the same. Stick to beef!

  68. User avatar ana.schuster43 says:

    4 stars
I don’t even measure anything lol. I’ll just cook the meat till browned and add onions and eggs. Same idea right?

    1. User avatar alex.erdman79 says:

      2 stars
Not really, but close? Eggs take longer than you think—if you slap them on with the raw meat it’ll be weird. Also why raw onions, won’t that be crunchy and spicy-bitter? I’d cook them with the meat like the directions say.

    2. 5 stars
Yeah, that’s basically the idea! Browning the meat and cooking onions down helps a ton. Just make sure your potatoes are already cooked through so they don’t end up hard in the burrito.

  69. User avatar jacqueline.cassin93 says:

    2 stars
Not sure about 12-inch tortillas—those are huge. Might be easier with smaller ones, unless you’re making a giant breakfast roll.

  70. 5 stars
Yum! Jalapeños make everything better 🔥

    1. User avatar Jospeh Price says:

      5 stars
Totally agree! Jalapeños add that perfect kick. 🌶️

  71. User avatar Draugr Wight says:

    2 stars
Honestly kinda boring… like, is this just tacos without seasoning? I added garlic and it helped, but still.

  72. User avatar rosina.deckow33 says:

    4 stars
I tried making this but totally forgot the potatoes. Ended up just using the meat and cheese. Still tasty!

  73. User avatar myron.vandervort44 says:

    2 stars
I’m skeptical about boiling potatoes and then using them in a burrito—feels kinda soggy. Maybe pan-dry them a bit after?

    1. User avatar Charles Darwin says:

      5 stars
Yeah, I get what you mean—boiled potatoes can turn mushy. I usually drain them really well and let them steam off for a couple minutes, then I toss them in the pan with a little oil/butter for color. That fixes the sogginess for me.

    2. User avatar Blue Dartwing says:

      3 stars
Soggy potatoes??? Nah, just boil till tender then don’t soak them, keep the heat low. I wrap it quick, eat fast. Works every time 😅

  74. User avatar elisabeth.bayer says:

    3 stars
Tried it, very yummy! But the eggs were too eggy for my taste. Wish there were more potatoes.

  75. User avatar nisha.skiles92 says:

    5 stars
80% lean is the move. Less grease, more flavor. I’m also using extra virgin olive oil—should make the potatoes taste nicer.

  76. User avatar Darrell Padberg says:

    3 stars
Sounds good, butttt I heard flour tortillas are bad for you? What do u think?

  77. User avatar rich.landlord says:

    5 stars
This burrito is amazing! We make it every Sunday. So hearty and filling.

  78. 5 stars
Burrito, burrito, ohhhh burrito! Love it 🌯🌟

    1. User avatar mose.schoen says:

      5 stars
Burritos are life!!! I’m gonna make this tomorrow! 🌯🙌

  79. User avatar geneva.schimmel2017 says:

    5 stars
Simple and hearty—exactly what I want in the morning. The 80% lean tip helps, and the combo of eggs + potatoes + salsa is 🔥. I did add jalapeños and it gave it a nice kick.

  80. User avatar norbert.kovacek says:

    2 stars
I made this but used chicken instead of beef and it was so dry. Next time I’m going with beef for sure.

    1. User avatar pedro.hartmann69 says:

      4 stars
Yeah, chicken can get really dry when cooked like that. Beef is definitely a better choice for this recipe! Hope it turns out better next time.

  81. User avatar Shadout Mapes says:

    3 stars
Not gonna lie, “Morning Burrito” but the instructions only say step 2. 😅 Still, the meat/ onion part is solid. Would love the rest of the steps.

  82. User avatar rea.weimann49 says:

    2 stars
I followed the recipe but it just didn’t come out right. Might be user error, but I found it too greasy.

    1. User avatar herbert.barton69 says:

      3 stars
Greasy? Nah, I think that sounds like it went wrong somehow. I love this recipe and never had that issue!

    2. 4 stars
I think the amount of oil you used might have made it greasy. I usually just spray my pan lightly. Give it another shot!

  83. User avatar basementDweller says:

    4 stars
Pretty basic but in a good way. I like that salsa/jalapeños/tomatoes are optional so I can customize. Scrambled eggs with butter = yes.

  84. User avatar Barliman Butterbur says:

    5 stars
Love this idea—morning burritos are the best. The browned meat + onions combo sounds super flavorful. I’d add a little hot sauce too.

  85. User avatar rolf.ratke2012 says:

    5 stars
Breakfast in a wrap ✔️. Perfect for busy mornings!

    1. User avatar elia.king69 says:

Absolutely! I love making these burritos on Sunday and reheating them during the week. So handy!

I dunno… wraps seem a bit bland to me. Can’t we just use bread?

  86. User avatar Dannie Schumm says:

    5 stars
Nice start! Browning the meat with onions sounds perfect for a hearty burrito. I’d maybe add taco seasoning though—just my preference.

  87. User avatar mackenzie.bauch says:

    2 stars
It’s burrito, not rocket science. The meat and eggs were just fine. No need for the fuss.

  88. User avatar vikki.sporer3 says:

    3 stars
Meh, it was okay but kinda boring. Maybe I missed something? Needs more spice!

  89. User avatar Blue Dartwing says:

    5 stars
My kids will eat anything wrapped in a tortilla, so this is definitely going into rotation. Jalapeños might be too spicy for them though 😂

  90. User avatar wilmer.ankunding1978 says:

    5 stars
Wow, this looks delicious! Can’t wait to try it for breakfast!

    1. User avatar Lynn Wyman III says:

      5 stars
I know right?! I’m so excited too! Breakfast just got a major upgrade! 😍

    2. 3 stars
Looks good but I don’t think those ingredients will fill me up. I prefer something bigger for breakfast.

  91. User avatar ricardo.kuhic1963 says:

    5 stars
I made it with jalapeños and extra salsa and it slapped. The tortillas stayed pliable with butter too—nice touch.

  92. User avatar sanjuanita.wuckert1973 says:

    5 stars
This is convienent and takes no time at all! Just what I need for my busy mornings. 💪

  93. User avatar vergie.kutch93 says:

    3 stars
Sounds good, but I’m skeptical about using 12 inch flour tortillas. Those always tear on me. Maybe use smaller ones?

    1. User avatar curt.sawayn says:

      4 stars
Totally fair—12 inch can be a pain if they’re dry. I’ve had them tear too. Try warming them longer (and keeping a little butter or oil on them), or go with smaller tortillas so you get less stretching when folding.

  94. User avatar Flame Atronach says:

    5 stars
I made something similar but with breakfast sausage. The 80% lean tip matters—otherwise it gets greasy fast. Great, hearty vibe.

  95. User avatar marisa.lebsack says:

    4 stars
Yum 🤤. Super filling breakfast! My kids loved them and they are super picky eaters.

  96. 1 star
Meh. Too many “optional” things. Also, step 2 is like, half a recipe. Without the rest it’s hard to rate properly.

    1. User avatar stanford.ankunding1962 says:

      2 stars
Yeah, I get what you mean. Step 2 feels like it’s missing the surrounding context—would be easier to judge as a whole burrito process.

  97. User avatar ciera.lang2022 says:

    3 stars
Only issue: the instructions you gave are basically step 2… where’s the rest? 😬 Still, the ingredient list looks good and I like the 80% lean tip.

  98. User avatar Wilford Hickle says:

    5 stars
These flavors sound perfect for a quick morning—meat + onions + eggs + potatoes is such a winning combo. I’d definitely add salsa and jalapeños. Thanks for keeping it simple!

  99. User avatar rosalina.rempel2025 says:

    1 star
This is too many ingredients for breakfast! Just scrambled eggs are fine, no need for all this fuss.

  100. 4 stars
I’m not a huge meat person, so I swapped in turkey. It browned great and the onions helped a lot. The eggs were fluffy with butter—nice touch keeping tortillas pliable.

  101. 5 stars
This morning burrito is so good, I can’t get enough! The best way to start the day!

  102. User avatar ricardo.kilback84 says:

    1 star
This is not traditional burrito! Real burrito have rice and beans. Come on!

  103. User avatar chanell.brakus says:

    5 stars
This is a solid base. I added a little garlic and used cooked onions from the night before—so good with the salsa.

  104. User avatar Dr. Jerald Littel says:

    5 stars
My family loves burritos, so I tried this. Scrambled eggs in butter + boiled potatoes? Super filling. Would make again, no doubt.

  105. User avatar ann.carroll70 says:

    3 stars
I don’t get why potatoes are “boiled, cooked” twice basically. Either way, it tasted fine. Probably just write the instructions clearer.

  106. User avatar lavern.zulauf1997 says:

    4 stars
Why do we need butter AND olive oil? Just pick one 😅 Also jalapeños are NEVER optional in my house.

  107. User avatar wilhemina.beier says:

    2 stars
Idk… 12-inch tortillas are too big for breakfast for me. Might be messy in the morning. But tastes good I guess.

  108. 3 stars
The ingredient list feels a bit incomplete with the “Instructions: 2.” only. Also, potatoes already cooked—how much are we talking?

    1. 3 stars
Yeah I agree—this looks like it’s missing the rest of the instructions. Also for the potatoes, I’d probably use about 2 cups cooked cubed potatoes (roughly 2 medium potatoes).

    2. User avatar karl.morissette43 says:

      2 stars
“Instructions: 2”?? lol I’m not psychic. But for the potatoes: use whatever you got—maybe 1–2 medium cooked potatoes, then season with salt/pepper and warm with the meat. Should work.

  109. User avatar pablo.marvin says:

    4 stars
80% lean preferred?? I usually do 90/10 because I hate grease. Also I’d cook the onions separately so they don’t burn with the meat. But yeah, sounds tasty.

    1. User avatar cherelle.hudson says:

      3 stars
80% is fineeee, just drain it? I always dump the onions in with the meat and somehow they don’t burn… maybe because I stir a lot lol. Still sounds good though.

    2. 5 stars
90/10 is my go-to too—grease is the worst. Cooking the onions separately is smart so you don’t end up with that burnt onion taste.

  110. User avatar Saruman the White says:

    5 stars
This is such a solid morning idea—meat + eggs + potatoes in a tortilla is always a win. I’d add a little cumin though. 4/10 it’s spicy, 9/10 it’s filling.

  111. 4 stars
What if I don’t have flour tortillas shells—can I use corn? Or is it gonna fall apart? Please say it won’t be sad 😅

    1. User avatar jamar.will22 says:

      3 stars
Umm… corn tortillas usually fall apart for me, like instantly 😭 If you try, fry them for like 10-20 seconds first or add an egg layer/cheese so they stick together better. I think flour is still best though.

    2. User avatar roy.keeling32 says:

      5 stars
Corn tortillas can work, but they’re more likely to crack if they’re not warmed/softened. I’d warm them in a dry pan or microwave covered, then quickly assemble while pliable. A little butter or oil in the pan helps them toast without breaking. They might be less “burrito-y” than flour, but won’t be sad 😅

  112. User avatar Draugr Scourge says:

    4 stars
Potatoes boiled then cubed is fine, but please don’t overcook them or they get mushy. I’d pan-crisp them after boiling. Otherwise 10/10.

    1. User avatar cody.huel says:

      5 stars
Totally agree—overcooked potatoes turn into sad mash. I usually boil just until fork-tender, then pan-crisp in a little oil so they actually hold their shape. Great tip!

    2. User avatar doyle.gleason80 says:

      4 stars
i tried this once but i boiled them way to long cuz i was hungry 😅 now it was mushy. next time i’ll stop earlier and crisp in the pan. thanks for the warning!

  113. User avatar Carson King says:

    5 stars
This is comfort food. I like that it’s customizable with tomatoes and jalapeños. I used cheddar and it melted perfectly. Would definitely make again for meal prep.

    1. User avatar smartestRedditor says:

      3 stars
Ok but just to check—does it actually say how to cook the eggs and potatoes after that step? I might be missing it. Also I used feta once and it got kinda… weird. Cheddar sounds safer.

    2. User avatar ArabianNights says:

      5 stars
Love this! Comfort food and also meal-prep friendly is the best combo. I always add jalapeños, so I’m glad that’s in the “customizable” lane. 🔥

  114. User avatar Mirna Stroman says:

    5 stars
I tried something like this and it came out really good. Using 80% lean makes it less greasy, and boiling the potatoes first is smart. I’d probably use extra cheese lol.

  115. User avatar caryn.metz says:

    5 stars
Sooo good. I did this with turkey instead of hamburger and it still worked. Next time I’ll add tomatoes for freshness.

  116. User avatar Florentina Rogahn Sr. says:

    5 stars
Love how simple this is—browned meat + onions is a solid base. I’d probably add salsa even if it says optional. Morning burritos are the best.

  117. User avatar betty.predovic says:

    3 stars
Not sure about boiling the potatoes first. I’d rather pan-roast them so they get crispy. Otherwise it might be kind of soft and watery.

  118. User avatar joe_banana says:

    3 stars
I’m skeptical of boiling potatoes and then mixing—sounds kinda bland unless you season them. I added salt and pepper and it turned out way better.

  119. User avatar reuben.jaskolski says:

    4 stars
80% lean is the sweet spot, agreed. I’m the type who always adds jalapeños even if it “burns my face,” lol.

  120. User avatar delphine.funk says:

    4 stars
The ingredient list is good but the instructions are incomplete—might be a draft. Still, I can follow it in my head and it’ll probably turn out great.

  121. User avatar Gia Greenholt I says:

    5 stars
Simple and hearty—love the idea of using onions with the browned meat. The 80% lean note is a nice touch too.

  122. User avatar nanette.kulas says:

    3 stars
Only one set of instructions though—what about scrambling the eggs and assembling the burritos? I’m gonna have to freestyle the rest, but the ingredients look great.

  123. User avatar Wally Huel says:

    4 stars
One problem: it says tomatoes optional, onions optional, jalapeños optional… basically you can do anything lol. I made it as written and it tasted like breakfast burrito soup inside a tortilla (in a good way).

  124. 2 stars
I tried this but my tortillas tore every time. I think the butter step matters a ton—mine probably weren’t warm enough. Also I boiled the potatoes too long so they got kinda mushy.

  125. User avatar cindi.stanton85 says:

    4 stars
I don’t eat pork, so hamburger works for me. The jalapeños optional thing is great—my family is mixed on spice. Great base recipe!

  126. 2 stars
Not gonna lie, I’m skeptical about boiling potatoes and then just throwing everything in—sounds a bit bland unless the salsa is doing heavy lifting.

  127. 4 stars
80% lean is a bit specific lol. I used 85% and it was still good—just a little less grease to worry about. The onions really helped.

  128. User avatar dominque.lynch says:

    5 stars
For breakfast? Yes please. Jalapeños + salsa optional is the correct amount of flexibility. I’d definitely use extra virgin olive oil here.

    1. User avatar Wonko the Sane says:

      3 stars
Breakfast burrito sounds good but jalapeños *and* salsa feels like too much spicy for morning 😅. I’ll do mild salsa and use the jalapeños like… only on one half. Also, do you cook the potatoes again in the pan or just mix them in?

    2. User avatar Emily Saunders says:

      5 stars
Totally agree—extra virgin olive oil makes it taste way more “breakfast restaurant” and not greasy. I also like adding chopped jalapeños to the eggs so they don’t just sit on top.

  129. User avatar darren.moen21 says:

    5 stars
I tried something similar years ago and it was bomb. Jalapeños would make it. Also, cubed potatoes in a burrito? Genius.

    1. User avatar waldo.greenfelder says:

      3 stars
Huh, I’m not sure about boiling the potatoes first. Wouldn’t they get too soft? I usually pan-fry them so they stay crispy. Also 80% lean… why not 90%? But I do like jalapeños in burritos, no lie.

    2. User avatar Ice Wraith says:

      5 stars
Yes!! Jalapeños really do take breakfast burritos to the next level. And cubed potatoes in there are such a satisfying move—more hearty than just rice or nothing. 😄

  130. User avatar gretchen.towne2022 says:

    4 stars
I made something like this but with turkey and it was pretty good. The 80% lean detail feels oddly specific though—does it really matter that much?

    1. 4 stars
Yeah, the 80% lean part actually matters a bit—turkey especially can turn dry, and fat changes how juicy it stays. You can go a little leaner or fattier, just adjust cooking time.
