Ingredients
  

  • 6 to 8 chicken thighs boneless, skinless
  • 1 cup onions sliced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste
  • garlic powder optional

Instructions
 

Heat the Skillet:

  • In an iron skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat.

Cook Onions:

  • Add 1 cup of sliced onions to the skillet and sauté until they start to soften.

Sear the Chicken:

  • Season the chicken thighs with salt, pepper, and optional garlic powder.
  • Add the seasoned chicken thighs to the skillet, searing them on one side until browned.

Simmer:

  • Turn the chicken thighs over, then reduce the heat to medium-low.
  • Cover the skillet with a lid and let the chicken simmer for about 25 to 30 minutes, until fully cooked and tender.

Serve:

  • Serve the chicken thighs hot with rice or mashed potatoes.

    I think you should really marinate the chicken first. My mom always did and it makes it way better!

    My onions always burn if I use medium heat too long. Maybe lower it after they start browning? Otherwise this is pretty foolproof.

      Totally—onions go from golden to burnt fast. I usually turn the heat down as soon as they start to brown and add a tiny splash of water if the pan gets too hot. Works every time.
