Ingredients
- 6 to 8 chicken thighs boneless, skinless
- 1 cup onions sliced
- 2 tbsp olive oil
- 2 tbsp butter
- Salt and pepper to taste
- garlic powder optional
Instructions
Heat the Skillet:
- In an iron skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat.
Cook Onions:
- Add 1 cup of sliced onions to the skillet and sauté until they start to soften.
Sear the Chicken:
- Season the chicken thighs with salt, pepper, and optional garlic powder.
- Add the seasoned chicken thighs to the skillet, searing them on one side until browned.
Simmer:
- Turn the chicken thighs over, then reduce the heat to medium-low.
- Cover the skillet with a lid and let the chicken simmer for about 25 to 30 minutes, until fully cooked and tender.
Serve:
- Serve the chicken thighs hot with rice or mashed potatoes.

My onions always burn if I use medium heat too long. Maybe lower it after they start browning? Otherwise this is pretty foolproof.
Totally—onions go from golden to burnt fast. I usually turn the heat down as soon as they start to brown and add a tiny splash of water if the pan gets too hot. Works every time.

You can definitely use a nonstick skillet! The iron skillet can give a nice sear, but it’s not a strict rule. Cook how you enjoy it! 😊
