Chicken and Spinach Lemon Soup

2 boneless, skinless chicken breasts, thinly sliced
Salt and pepper, to taste
2 tablespoons olive oil
1 onion, diced
4 cloves garlic, minced
6 cups chicken broth
1 cup water
3/4 cup orzo pasta
3 cups fresh spinach
Juice of 1 lemon
Zest of 1 lemon


1.Season chicken breasts with salt and pepper.
2.Heat olive oil in a large pot over medium heat. Add chicken and cook until browned, about 4-5 minutes. Remove chicken from pot and set aside.
3.In the same pot, add onion and garlic. Cook until onion is translucent, about 2-3 minutes.
4.Add chicken broth and water to the pot. Bring to a boil.
5.Stir in orzo pasta and let cook for 8-10 minutes, until pasta is al dente.
6.Add cooked chicken back to the pot. Stir in spinach, lemon juice, and lemon zest. Cook for an additional 2-3 minutes, until spinach is wilted.
7.Serve hot and enjoy!
