1 lb ground beef
1 medium onion, chopped
1 clove garlic, minced
1 cup long grain rice
2 cups beef broth
1 can (10.75 oz) condensed tomato soup
1 can (4 oz) sliced mushrooms, drained
2 cups shredded cheddar cheese
1/2 tsp dried thyme
Salt and pepper, to taste


1.Preheat the oven to 375°F (190°C).
2.In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and cooked through. Drain any excess fat.
3.Stir in the rice, beef broth, condensed tomato soup, mushrooms, dried thyme, salt, and pepper. Bring to a boil.
4.Transfer the mixture to a greased 9x13-inch baking dish. Cover with foil.
5.Bake for 30 minutes. Remove the foil and sprinkle the shredded cheddar cheese on top.
6.Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
7.Remove from the oven and let it cool for a few minutes before serving.
