Ingredients

  • 3 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • 1 medium Yellow onion (finely chopped)
  • 3 cloves Garlic (minced)
  • 1.5 lbs Cremini or Button mushrooms (sliced, reserve a few slices for garnish)
  • 2 tsp Fresh thyme (chopped, or 1 tsp dried thyme)
  • 1/4 cup All-purpose flour (to thicken)
  • 4 cups Vegetable broth (or beef broth for a deeper, richer flavor)
  • 1/2 cup Heavy cream (or half-and-half)
  • 1 tsp Salt (or to taste)
  • 1/2 tsp Black pepper (freshly ground)

Instructions

  • Heat the butter and olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  • Add the chopped onion and sauté for 4-5 minutes until softened. Stir in the sliced mushrooms and fresh thyme.
  • Cook the mushrooms undisturbed for a few minutes to let them brown, then stir occasionally until they have released all their moisture and turn a deep golden brown (about 8-10 minutes).
  • Stir in the minced garlic and cook for 1 minute until highly fragrant.
  • Sprinkle the flour over the mushroom mixture. Stir constantly for 1-2 minutes to cook out the raw flour taste and coat the vegetables evenly.
  • Gradually pour in the broth, whisking continuously to prevent any flour lumps from forming. Season with salt and black pepper.
  • Bring the soup to a gentle boil, then reduce the heat to low, cover, and let it simmer for 15 minutes to allow the earthy flavors to meld.
  • For a velvety texture, use an immersion blender to puree about half of the soup directly in the pot, leaving plenty of mushroom chunks for a satisfying bite.
  • Remove from the heat and stir in the heavy cream. Taste and adjust the seasoning if necessary. Serve hot, garnished with a few reserved sautéed mushroom slices and fresh thyme!

Why This Ranks Among the Top 10 Best Soup Recipes Ever

It is no surprise that food lovers frequently vote this into any collection of the top 10 best soup recipes ever. The magic lies in transforming basic, affordable ingredients into a restaurant-quality experience. Here is why it stands out so brilliantly:

  • Deep Earthy Flavor: Browning the mushrooms properly unlocks a savory, intense umami profile that serves as the undeniable backbone of the dish.
  • Elegant Presentation: Despite being incredibly easy to prepare in a single pot, its creamy texture makes it feel like a sophisticated starter at a fine dining restaurant.
  • Perfectly Creamy: Using a simple roux and a splash of heavy cream creates a luxurious mouthfeel without masking the delicate, natural mushroom taste.

Tips for Perfecting One of the Top 10 Best Soup Recipes Ever

  • Take Time to Brown: Do not rush cooking the mushrooms! Let them release their moisture and get nicely browned in the pan before adding the liquid. This is where all the deep flavor lives.
  • Mix Your Mushrooms: While standard cremini or button mushrooms work beautifully, mixing in some shiitake or wild mushrooms will elevate the soup’s earthy profile even further.
  • Blend Strategically: For the best texture, only blend half of the soup. This thickens the broth while leaving some satisfying, tender mushroom chunks intact for a wonderful mouthfeel.
