Instructions
Cook the pasta in a large pot of boiling salted water according to the package instructions until al dente. Drain and set aside.
In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the chopped sun-dried tomatoes to the pan and cook for an additional 2-3 minutes.
Add the chopped spinach to the pan, stirring continuously until wilted, about 2-3 minutes.
Add the cooked pasta to the pan and toss to combine all ingredients. Season with salt and pepper to taste.
Serve immediately, garnished with grated parmesan cheese if desired.
