A delicious and healthy shrimp stir-fry recipe

Ingredients
  

  • 1 lb shrimp peeled and deveined
  • 2 cups mixed vegetables broccoli, snap peas, carrots), bell peppers
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the garlic and ginger and cook for 1 minute until fragrant.
  • Add the shrimp to the skillet and cook for 2-3 minutes until pink and cooked through. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the vegetables and cook for 3-4 minutes until tender-crisp.
  • Return the shrimp to the skillet and stir to combine with the vegetables.
  • In a small bowl, whisk together the soy sauce, hoisin sauce, and sesame oil.
  • Pour the sauce over the shrimp and vegetables and stir to coat.
  • Cook for another 1-2 minutes until heated through.
  • Season with salt and pepper to taste.
  • Serve the shrimp stir-fry hot with steamed rice or noodles.
