In a large skillet, heat the olive oil over medium-high heat.
Add the garlic and ginger and cook for 1 minute until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes until pink and cooked through. Remove the shrimp from the skillet and set aside.
In the same skillet, add the vegetables and cook for 3-4 minutes until tender-crisp.
Return the shrimp to the skillet and stir to combine with the vegetables.
In a small bowl, whisk together the soy sauce, hoisin sauce, and sesame oil.
Pour the sauce over the shrimp and vegetables and stir to coat.
Cook for another 1-2 minutes until heated through.
Season with salt and pepper to taste.
Serve the shrimp stir-fry hot with steamed rice or noodles.
