Preheat the oven to 375°F (190°C).
Roll out the pie crust and press it into a 9-inch pie dish.
In a bowl, whisk together the eggs, heavy cream, salt, and black pepper.
Sprinkle half of the cheese onto the bottom of the pie crust. Add the chopped vegetables and bacon or ham.
Pour the egg mixture over the ingredients in the pie crust.
Sprinkle the remaining cheese on top.
Bake for 40-45 minutes, or until the quiche is set and golden brown on top.
Let cool for a few minutes before slicing and serving.
