Heat olive oil in a large skillet over medium heat.
Add sliced chicken and cook until browned and cooked through, about 5-7 minutes.
Remove chicken from skillet and set aside.
In the same skillet, add garlic and ginger, sauté for 1 minute.
Add chopped kale and cook until wilted, about 3-4 minutes.
Return chicken to the skillet, add soy sauce and sesame oil, and stir well to combine.
Cook for another 2-3 minutes, until heated through. Serve immediately.
