A quick and healthy stir-fry with tender chicken and nutrient-rich kale, perfect for a weeknight dinner.

Ingredients
  

  • 1 pound chicken breast sliced thin
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 bunch kale stems removed, leaves chopped
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger fresh, grated

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  • Remove chicken from skillet and set aside.
  • In the same skillet, add garlic and ginger, sauté for 1 minute.
  • Add chopped kale and cook until wilted, about 3-4 minutes.
  • Return chicken to the skillet, add soy sauce and sesame oil, and stir well to combine.
  • Cook for another 2-3 minutes, until heated through. Serve immediately.
