Ingredients
  

  • 3 pounds pork loin boneless
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 4 cloves garlic minced
  • to taste salt
  • to taste black pepper

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, combine olive oil, rosemary, thyme, and garlic. Stir to combine.
  • Rub the pork loin with the herb mixture, ensuring it is completely covered. Season with salt and pepper.
  • Place the pork loin on a roasting pan and cook in the preheated oven for 1 hour, or until the internal temperature reaches 145°F (63°C).
  • Allow the pork loin to rest for 10 minutes before slicing and serving.
