In a large bowl, combine the olive oil, minced garlic, lemon juice, dried oregano, dried basil, dried thyme, salt, and pepper. Mix well to combine.
Add the shrimp to the bowl and toss to coat them in the marinade. Let the shrimp marinate for at least 10 minutes.
Preheat the grill to medium-high heat.
Thread the shrimp onto skewers, making sure to leave space between each shrimp.
Grill the shrimp for 2-3 minutes per side, or until they are pink and opaque.
Remove the shrimp from the grill and serve them with lemon wedges.
