Instructions
Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much moisture as possible.
In a mixing bowl, combine the grated zucchini, feta cheese, onion, parsley, flour, beaten egg, and black pepper. Mix well.
Shape the mixture into small tots or mini fritters.
Heat olive oil in a large skillet over medium heat. Add the tots and cook until golden brown on all sides, about 3-5 minutes per side.
Remove from skillet and drain on paper towels. Serve warm.
