These Greek Zucchini Tots are a delicious and healthy appetizer or snack that combines zucchini with fresh herbs and cheese, providing a burst of Mediterranean flavors in every bite.

Ingredients
  

  • 2 cups zucchini grated and drained
  • 1/3 cup feta cheese crumbled
  • 1/4 cup onion finely chopped
  • 2 tablespoons parsley chopped
  • 2 tablespoons flour
  • 1 egg beaten
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions
 

  • Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much moisture as possible.
  • In a mixing bowl, combine the grated zucchini, feta cheese, onion, parsley, flour, beaten egg, and black pepper. Mix well.
  • Shape the mixture into small tots or mini fritters.
  • Heat olive oil in a large skillet over medium heat. Add the tots and cook until golden brown on all sides, about 3-5 minutes per side.
  • Remove from skillet and drain on paper towels. Serve warm.
