Preheat your oven to 425°F (220°C).
In a large bowl, combine apples, granulated sugar, brown sugar, cinnamon, nutmeg, flour, and lemon juice. Toss to coat the apples evenly.
Roll out the first pie crust and fit it into the bottom of a 9-inch pie dish. Fill with the apple mixture, mounding slightly in the center.
Dot the top of the apples with butter. Roll out the second crust and place over the apples. Trim and flute the edges to seal.
Cut slits or a decorative pattern in the top crust to allow steam to escape.
Bake in the preheated oven for 15 minutes. Then reduce the temperature to 350°F (175°C) and continue baking for 45 minutes or until the crust is golden and the filling is bubbly.
Allow the pie to cool on a wire rack for at least 2 hours before serving to let the filling set.
