Cut the cauliflower into bite-sized florets.
In a bowl, whisk together the flour, plant-based milk, garlic powder, paprika, salt, and black pepper until smooth.
Dip each cauliflower floret into the batter, letting any excess drip off, then transfer to a baking sheet lined with parchment paper.
Bake for 20-25 minutes, or until the cauliflower bites are golden and crispy.
Meanwhile, in a small bowl, mix together the hot sauce and melted vegan butter.
Once the cauliflower bites are done baking, transfer them to a large mixing bowl and pour the buffalo sauce over them. Toss to coat evenly.
Serve the fried buffalo cauliflower bites hot, with celery sticks and vegan ranch or blue cheese dressing on the side.
