These Crispy Pea Fritters are a delicious and easy appetizer or snack. Packed with fresh peas and herbs, they're crispy on the outside and soft on the inside.

Ingredients
  

  • 1 cup fresh peas or frozen peas, thawed
  • 1/2 cup all-purpose flour
  • 1 large egg lightly beaten
  • 1/4 cup milk
  • 1/4 cup fresh herbs such as mint and parsley, chopped
  • 1 teaspoon baking powder
  • to taste salt
  • to taste black pepper
  • 2 tablespoons olive oil for frying

Instructions
 

  • In a large mixing bowl, combine the flour, baking powder, salt, and black pepper.
  • Whisk in the egg and milk until the batter is smooth.
  • Fold in the peas and chopped herbs until evenly distributed.
  • Heat olive oil in a non-stick skillet over medium-high heat.
  • Spoon heaped tablespoons of batter into the pan, flattening slightly to make fritters.
  • Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  • Remove fritters from the pan and drain on a paper towel-lined plate.
  • Serve warm with a dollop of yogurt or sour cream, if desired.
