Ingredients
  

  • 2 cups mixed dried fruit such as raisins, currants, and chopped dates
  • 1 cup mixed nuts chopped
  • 1 cup brown sugar packed
  • 1/2 cup butter softened
  • 3 eggs large
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup orange juice freshly squeezed

Instructions
 

  • Preheat the oven to 325°F (165°C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, cream together the butter and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the orange juice.
  • Combine the flour, baking powder, cinnamon, and nutmeg; gradually stir into the creamed mixture.
  • Fold in the mixed dried fruits and nuts.
  • Pour the batter into the prepared loaf pan.
  • Bake in the preheated oven for 1 hour and 30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before removing to cool completely on a wire rack.
