Ingredients
  

  • 1 can chickpeas rinsed and drained
  • 1 tablespoon olive oil for sauteing
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon curry powder adjust to taste
  • 1 can coconut milk full fat
  • 1 teaspoon salt or to taste
  • 1/4 cup fresh cilantro chopped, for garnish

Instructions
 

  • Heat the olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until the onion becomes translucent.
  • Stir in the curry powder and cook for another minute until fragrant.
  • Add the chickpeas and coconut milk into the pan. Stir well to combine, and bring to a simmer.
  • Reduce the heat to low and let the curry simmer for about 20 minutes, allowing the flavors to meld together.
  • Season the curry with salt to taste. If desired, adjust the curry powder or add spices as needed.
  • Serve hot, garnished with fresh cilantro. Enjoy your delicious chickpea curry!
