Instructions
Heat the olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until the onion becomes translucent.
Stir in the curry powder and cook for another minute until fragrant.
Add the chickpeas and coconut milk into the pan. Stir well to combine, and bring to a simmer.
Reduce the heat to low and let the curry simmer for about 20 minutes, allowing the flavors to meld together.
Season the curry with salt to taste. If desired, adjust the curry powder or add spices as needed.
Serve hot, garnished with fresh cilantro. Enjoy your delicious chickpea curry!
