Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and brown on both sides. Remove from skillet and set aside.
In the same skillet, add the onion, garlic, and bell pepper. Sauté until the vegetables are soft.
Add the crushed tomatoes, chicken broth, oregano, salt, and black pepper to the skillet. Stir to combine.
Return the chicken thighs to the skillet, making sure they are submerged in the sauce. Reduce heat to low, cover, and let simmer for 30-35 minutes until the chicken is cooked through and tender.
