In a blender, combine the ripe bananas, almond milk, honey or maple syrup, and vanilla extract. Blend until smooth.
Pour the banana mixture into a bowl and add the chia seeds. Stir well to combine.
Cover the pudding and refrigerate for at least 2 hours, or overnight, until it thickens.
Once thickened, give the pudding a stir and divide it into serving bowls.
Top with sliced bananas, shredded coconut, and chopped nuts, if desired.
