1 pound steak
1 red bell pepper, sliced
1 red onion, sliced
1 zucchini, sliced
1 tablespoon olive oil
Salt and pepper to taste
4 large eggs, scrambled
4 large flour tortillas
1/2 cup shredded cheddar cheese
Salsa and guacamole for serving


1.Preheat grill to medium-high heat.
2.Season steak with salt and pepper.
3.Grill steak for 4-5 minutes per side or until desired doneness.
4.Let steak rest for 5 minutes, then slice thinly against the grain.
5.In a large skillet, heat olive oil over medium heat.
6.Add bell pepper, onion, and zucchini to the skillet.
7.Cook for 5-7 minutes or until vegetables are tender.
8.Add salt and pepper to taste.
9.Scramble the eggs in a separate skillet over medium-low heat until cooked through.
10.Warm the flour tortillas in a dry skillet or on the grill.
11.Divide the scrambled eggs, grilled steak, and sautéed vegetables among the tortillas.
12.Top with shredded cheddar cheese, salsa, and guacamole.
13.Roll up the tortillas tightly, tucking in the sides as you go.
14.Serve immediately and enjoy!
