Grilled Steak and Veggie Breakfast Burrito

Start your day off right with this delicious grilled steak and veggie breakfast burrito!

Ingredients
  

  • 1 pound steak
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 1 zucchini, sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 4 large eggs, scrambled
  • 4 large flour tortillas
  • 1/2 cup shredded cheddar cheese
  • Salsa and guacamole for serving

Instructions
 

  • Preheat grill to medium-high heat.
  • Season steak with salt and pepper.
  • Grill steak for 4-5 minutes per side or until desired doneness.
  • Let steak rest for 5 minutes, then slice thinly against the grain.
  • In a large skillet, heat olive oil over medium heat.
  • Add bell pepper, onion, and zucchini to the skillet.
  • Cook for 5-7 minutes or until vegetables are tender.
  • Add salt and pepper to taste.
  • Scramble the eggs in a separate skillet over medium-low heat until cooked through.
  • Warm the flour tortillas in a dry skillet or on the grill.
  • Divide the scrambled eggs, grilled steak, and sautéed vegetables among the tortillas.
  • Top with shredded cheddar cheese, salsa, and guacamole.
  • Roll up the tortillas tightly, tucking in the sides as you go.
  • Serve immediately and enjoy!
