Ingredients

2 boneless, skinless chicken breasts
1 tsp olive oil
salt and pepper to taste
8 cups mixed salad greens
1 cup sliced almonds
1 cup mandarin orange segments
1/2 cup crumbled feta cheese
1/4 cup chopped fresh cilantro

Instructions

1.Preheat grill to medium-high heat.
2.Brush the chicken breasts with olive oil and season with salt and pepper.
3.Grill the chicken for 6-8 minutes per side, or until cooked through and no longer pink in the center. Let it rest for a few minutes, then slice into thin strips.
4.In a large salad bowl, combine the mixed greens, sliced almonds, mandarin orange segments, feta cheese, and cilantro.
5.Add the grilled chicken slices to the salad.
6.In a separate small bowl, whisk together the dressing ingredients: 1/4 cup olive oil, 2 tablespoons red wine vinegar, 1 tablespoon honey, 1 teaspoon Dijon mustard, and salt and pepper to taste.
7.Drizzle the dressing over the salad and toss gently to combine.
8.Serve immediately and enjoy!
