Upgrade a classic with the ultimate Blackstone Grilled Cheese sandwich. The heavy flat top griddle provides incredibly steady, even heat, ensuring edge-to-edge golden, crispy bread and a perfectly gooey, melted center every single time. It is simple, nostalgic, and absolutely delicious.
Servings 4 people
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 13 minutes

Ingredients

  • 8 slices Thick-cut bread (Sourdough, Texas Toast, or classic white bread)
  • 4 tbsp Mayonnaise or softened butter (for the outside of the bread)
  • 8 slices Cheddar cheese (medium or sharp)
  • 8 slices Gruyère or Provolone cheese (for the perfect cheese pull)
  • 1 tbsp Butter (optional, for the griddle surface)

Instructions

  • Preheat your Blackstone griddle to medium-low heat. It is crucial to use a gentler heat so the cheese melts completely before the bread burns.
  • Lay out your 8 slices of bread. Spread a thin, even layer of mayonnaise (or softened butter) on one side of every slice. This will be the outside of your sandwich.
  • Place 4 slices of bread onto the griddle, mayo/butter side down.
  • Immediately build your sandwiches directly on the griddle. Place 2 slices of Cheddar and 2 slices of Gruyère (or Provolone) onto each piece of bread.
  • Top with the remaining 4 slices of bread, making sure the mayo/butter side is facing up.
  • Let the sandwiches cook undisturbed for about 4-5 minutes. Check the bottom; it should be a beautiful, even golden brown.
  • Carefully slide your spatula completely under each sandwich and flip. Press down very gently.
  • Cook the second side for another 4-5 minutes until golden brown and the cheese is completely melted and oozing from the sides.
  • Remove from the griddle, let them rest for just a minute so the cheese sets slightly, slice diagonally, and serve immediately!

Revolutionize a Childhood Classic on the Flat-Top

Everyone loves a deeply comforting, toasted cheese sandwich. However, achieving that elusive, perfect golden-brown crust while ensuring the center is completely molten can be surprisingly tricky on a standard kitchen stove. Enter your outdoor griddle. Moving this beloved comfort food outside elevates it from a quick after-school snack to a true gourmet experience. If you want to feed a crowd without anyone having to settle for a cold, rubbery sandwich, mastering the Blackstone Grilled Cheese is an absolute must. The heavy rolled steel provides an expansive, evenly heated surface that guarantees a uniform, thunderous crunch from edge to edge, every single time.

Why a Blackstone Grilled Cheese Beats the Stovetop

When cooking indoors, you are usually limited to fitting only one or two sandwiches into a standard cast-iron skillet. By the time the third batch is done, the first one is lukewarm and the cheese has solidified.

Here is exactly why taking your bread and dairy to the patio changes the game entirely:

  • Massive Batch Cooking: Whether you are feeding a hungry family of four or hosting a casual backyard lunch party, you can comfortably sizzle eight to ten sandwiches at the exact same time.
  • Edge-to-Edge Caramelization: Skillets notoriously have hot and cold spots, often leaving you with bread that is burnt in the middle and hopelessly pale on the crust. The massive griddle’s consistent heat ensures an even, flawless toast across the entire slice.
  • The Steam-Melt Technique: Because you have so much room to work with, you can easily utilize a metal basting dome. A tiny squirt of water on the bare steel next to the sandwich creates a burst of steam under the dome, forcing the thick layers of cheese to melt rapidly before the bread gets too dark.

The Secret to the Ultimate Melt

Creating the ultimate Blackstone Grilled Cheese requires much more than just throwing a slice of processed cheddar between two pieces of thin white bread. To achieve steakhouse-level quality, you need to think carefully about textures, melting points, and fats.

  • The Bread Selection: You need a sturdy foundation. Thick-cut artisan sourdough, rich brioche, or classic Texas toast are robust enough to handle the flipping process and the heavy cheese load without collapsing or turning soggy.
  • The Fat Debate (Butter vs. Mayo): While spreading butter is the traditional route, spreading a thin layer of full-fat mayonnaise on the outside of the bread actually yields a far crispiest, tangier, and more evenly browned crust because mayonnaise has a much higher smoke point.
  • The Ultimate Cheese Blend: Never rely on just one single type of cheese. Combine a sharp, aged cheese for a robust flavor profile (like sharp cheddar or Gruyere) with a high-moisture melting cheese (like Havarti, Monterey Jack, or classic White American) for that perfect, Instagram-worthy cheese pull.

Pairing Your Crispy Creations

Since a thick, gooey sandwich is incredibly rich and savory, you will likely want to balance your heavy meal with something bright, sweet, and acidic. After you scrape down your griddle, keep the heat going to prepare a phenomenal outdoor dessert! You will be amazed at how beautifully the sweet, smoky, and caramelized flavors of our Grilled Plums with Yogurt complement the savory notes of the toasted cheese.

Furthermore, mastering the delicate, low-heat techniques required for the perfect bread toast is a fantastic culinary stepping stone. Once you learn how to strictly control the temperature zones on your steel surface so your bread doesn’t burn, you will be perfectly prepared to tackle premium, heat-sensitive proteins. You can apply those exact temperature control skills to recipes like our vibrant, restaurant-quality Grilled Jalapeno Tuna Steaks.

Why do people say sourdough is the best? It’s just bread. Regular white bread works fine.

I don’t know what gruyere is but I subbed it with American cheese. Still turned out good!

American cheese is like, totally different from Gruyère! But hey, if it worked for you, that’s cool! Sometimes you just gotta roll with what you have.

Seriously? American cheese? I wouldn’t trust that for a grilled cheese. Gruyère makes it special! But glad it turned out good for you. Guess it can work.

I followed the recipe, but my bread burned before the cheese melted. Gotta be careful with the heat.
