Ingredients
  

  • 14 oz firm tofu drained and patted dry
  • 2 tablespoons olive oil extra virgin recommended
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1 tablespoon soy sauce or tamari for gluten-free
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper freshly ground
  • 2 tablespoons fresh herbs such as parsley or chives, finely chopped

Instructions
 

  • In a food processor, combine the tofu, olive oil, lemon juice, garlic, and soy sauce.
  • Process until the mixture is smooth and creamy, scraping down the sides as necessary.
  • Taste the dip and adjust the seasoning with salt and pepper as needed.
  • Transfer the dip to a serving bowl and stir in the fresh herbs.
  • Serve immediately, or chill in the refrigerator to allow the flavors to meld.
