A delicious and refreshing Strawberry Ladyfinger Cake that is perfect for any occasion. This cake combines the light and airy texture of ladyfingers with the sweetness of fresh strawberries and a creamy filling.

Ingredients
  

  • 1 lb fresh strawberries hulled and sliced
  • 1 cup heavy whipping cream chilled
  • 8 oz mascarpone cheese softened
  • 1 cup powdered sugar sifted
  • 1 tsp vanilla extract
  • 1 package ladyfingers

Instructions
 

  • In a large mixing bowl, beat the heavy whipping cream until stiff peaks form.
  • In another bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth.
  • Fold the whipped cream into the mascarpone mixture until fully combined.
  • Line the bottom of a springform pan with half of the ladyfingers.
  • Spread half of the mascarpone mixture over the ladyfingers, then top with sliced strawberries.
  • Repeat the layers with the remaining ladyfingers, mascarpone mixture, and strawberries.
  • Refrigerate for at least 4 hours or overnight.
  • Carefully remove the sides of the springform pan before serving.
