Use paper towels to pat the pork chops completely dry. Season both sides evenly with salt and freshly ground black pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 4-5 minutes on the first side until a rich, golden-brown crust forms.
Flip the pork chops. Cook for another 3-4 minutes until cooked through (145°F/63°C internally), then remove them from the skillet and set aside on a plate.
Reduce the heat to medium. In the same skillet, melt the butter and add the minced garlic. Sauté for about 30 seconds until fragrant, scraping up any browned bits from the bottom of the pan.
Pour in the honey, soy sauce, and apple cider vinegar. Stir well and let the sauce simmer for 2-3 minutes until it starts to thicken and become beautifully syrupy.
Return the cooked pork chops to the skillet. Turn them a few times to coat them evenly in the sticky glaze and let them simmer for another 1-2 minutes to soak up the flavor. Garnish with chopped green onions and serve immediately!
