Ingredients
  

  • 2 cups fresh spinach washed and dried
  • 1 cup chickpeas cooked or canned, drained and rinsed
  • 1/4 cup red onion sliced
  • 1/4 cup cherry tomatoes halved
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt and pepper

Instructions
 

  • In a large bowl, combine the fresh spinach, chickpeas, sliced red onion, and halved cherry tomatoes.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Serve immediately or refrigerate for up to 2 hours for flavors to meld.
