Ingredients
  

  • 1 bunch collard greens washed and chopped
  • 4 slices bacon diced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 cups chicken broth low-sodium preferred
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon red pepper flakes optional
  • to taste salt and pepper

Instructions
 

  • In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
  • Add the diced onion to the pot and sauté in the bacon drippings until translucent, about 5 minutes. Add the minced garlic and sauté for an additional 1 minute.
  • Pour in the chicken broth and bring to a simmer. Add the chopped collard greens to the pot and stir to combine.
  • Add the apple cider vinegar, sugar, and red pepper flakes. Cover the pot and let the greens simmer for about 45 minutes, stirring occasionally, until the greens are tender.
  • Season with salt and pepper to taste, and stir in the cooked bacon just before serving.
