Ingredients
  

  • 200 grams pumpkin peeled and cut into cubes
  • 1 tablespoon olive oil for roasting
  • 1/2 cup plain yogurt for sauce
  • 1 tablespoon lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground
  • 1 tablespoon fresh parsley chopped, for garnish

Instructions
 

  • Preheat your oven to 200°C (400°F).
  • Toss the pumpkin cubes with olive oil, salt, and pepper, then spread them on a baking sheet.
  • Roast the pumpkin for 30 minutes or until tender and golden brown.
  • In a small bowl, mix the yogurt, lemon juice, garlic, a pinch of salt, and a pinch of pepper.
  • Serve the roasted pumpkin drizzled with the yogurt sauce and garnish with fresh parsley.
