Ingredients
  

  • 3 large potatoes peeled and grated
  • 1 small onion finely chopped
  • 2 tablespoons flour
  • 2 large eggs beaten
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1/2 cup vegetable oil for frying

Instructions
 

  • Peel and grate the potatoes, then place them in a cheesecloth and wring out as much moisture as possible.
  • In a large bowl, combine the drained potatoes, chopped onion, flour, beaten eggs, salt, and pepper.
  • Heat oil in a large pan over medium-high heat.
  • Drop spoonfuls of the potato mixture into the hot oil, flattening them with the back of the spoon or a spatula.
  • Fry latkes until golden brown on both sides, about 3-4 minutes per side.
  • Drain on paper towels and serve warm with applesauce or sour cream.
