Ingredients
  

  • 2 cups mashed potatoes cooled
  • 1 cup cheese shredded, such as cheddar or mozzarella
  • 1 egg large egg beaten
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup oil for frying

Instructions
 

  • In a large bowl, combine the cooled mashed potatoes, shredded cheese, salt, and black pepper.
  • Shape the mixture into small balls or oval-shaped croquettes.
  • Dip each croquette first into the flour, then the beaten egg, and finally coat with breadcrumbs.
  • Heat oil in a deep frying pan over medium heat.
  • Fry the croquettes in batches until golden and crispy, about 3-4 minutes on each side.
  • Remove and drain on paper towels. Serve hot.
