Instructions
In a large bowl, combine the cooled mashed potatoes, shredded cheese, salt, and black pepper.
Shape the mixture into small balls or oval-shaped croquettes.
Dip each croquette first into the flour, then the beaten egg, and finally coat with breadcrumbs.
Heat oil in a deep frying pan over medium heat.
Fry the croquettes in batches until golden and crispy, about 3-4 minutes on each side.
Remove and drain on paper towels. Serve hot.
