  • 500 grams mussels cleaned and debearded
  • 2 tablespoons olive oil extra virgin
  • 3 cloves garlic finely chopped
  • 400 grams tomatoes diced
  • 0.5 teaspoon red pepper flakes optional
  • to taste salt
  • to taste fresh parsley chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped garlic and red pepper flakes, sauté for 1-2 minutes until fragrant.
  • Stir in the diced tomatoes and cook for 5 minutes until they start to break down.
  • Add the mussels to the pot, cover, and cook for 5-7 minutes until the mussels have opened.
  • Discard any mussels that haven’t opened, season with salt to taste, and garnish with fresh parsley before serving.
