These mashed potato pancakes are crispy on the outside and soft on the inside. They're a perfect way to use up leftover mashed potatoes for a delicious side dish or quick snack.

Ingredients
  

  • 2 cups mashed potatoes leftover or freshly made
  • 1 large egg lightly beaten
  • 1/2 cup all-purpose flour
  • 1/4 cup green onions chopped
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil for frying

Instructions
 

  • In a large bowl, combine mashed potatoes, beaten egg, flour, chopped green onions, salt, and black pepper.
  • Mix until all ingredients are well incorporated and the mixture holds its shape when formed into a ball.
  • Heat vegetable oil in a skillet over medium heat.
  • Scoop about 1/4 cup of the potato mixture and shape it into a pancake, then place it in the hot skillet.
  • Cook pancakes for 3-4 minutes on each side until golden brown and crispy.
  • Remove and drain on paper towels. Serve warm.
