Ingredients
  

  • 2 large Japanese sweet potatoes peeled and cut into fries
  • 1 tablespoon olive oil for tossing
  • 1 teaspoon sea salt or to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1 cup mayonnaise for aioli
  • 1 clove garlic minced
  • 2 tablespoons fresh herbs chopped (such as parsley, dill, and chives)
  • 1 tablespoon lemon juice freshly squeezed

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Toss the sweet potato fries with olive oil, sea salt, and black pepper to coat evenly.
  • Arrange the fries in a single layer on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 25-30 minutes, flipping halfway through, until crispy and golden brown.
  • While the fries are baking, prepare the herby aioli by combining mayonnaise, minced garlic, chopped fresh herbs, and lemon juice in a bowl. Mix well.
  • Serve the sweet potato fries hot with the herby aioli on the side for dipping.
