Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound chicken breast cut into cubes
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup long-grain rice uncooked
  • 4 cups chicken broth
  • 1 can diced tomatoes with juice
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas thawed

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chicken and cook until browned on all sides.
  • Add onion and garlic, sauté until the onion is translucent.
  • Stir in rice and cook for 2 minutes, stirring frequently.
  • Pour in chicken broth and diced tomatoes, bring to a boil.
  • Add Italian seasoning, salt, and pepper, then reduce heat to low.
  • Cover and simmer for 25-30 minutes or until rice is tender.
  • Stir in peas and cook for an additional 5 minutes.
  • Serve hot, garnished with fresh herbs, if desired.
